    I made this to spread on top of a cheesecake. It was so delicious, I may never make any other lemon curd recipe ever again. The only things I'd do differently add the zest at the start and then strain it out so there's no gritty bits of zest and also just cook it in a pot over low heat, not over a bain marie. Awesome!

    I serve this sort of lemon curd mixture as a ..."dip" alongside swedish (very thin) ginger snaps. INCREDIBLE!

    I make this all the time after watching this recipe!! So good! And so easy!! If I'm treating myself we have it with a butter pound cake or if I'm being good (but still want a little something sweet lol) we have a little scoop with some fruit--to die for!!

    I strained mine and I put the lemon zest in food prosseser with the sugar. Gives you a good yellow finish and very lemon flavor

    Oooh, awesome. I have another batch of lemons almost ripe too. I love lemon curd but dang that stuff is expensive to make for tiny batches so this is wonderful. Plus reducing the egg and butter helps in calories too. Thanks! So glad Ben Hall (halbe) sent me to your channel!

    If you food processed process the zest with the sugar it imparts more lemon flavor and color. I can’t wait to try this lighter version of Lemon curd. Thanks for the awesome recipe.

    Question do you think using the immersion blender method while using hot butter into the curd to slowly warm it would work here since that works with making a rude hollandaise? Maybe using lemon juice to help keep it from splitting?

    I always add the zest at the beginning of the cooking process and then strain it out before cooling and eventually freezing the curd, but that's admittedly mostly so that I have an excuse to eat the whole pile of it. >_>

    Chef John, I just made today. it was delicious! The only thing is my curd was kind yellow instead of pale as yours. I was expecting to see the pale tint when it getting thicken. But, it just did not happen.

    Whisking it over the heat pasteurises it and 'cooks' it so its safe. Same as the butter-cream recipe for icing/frosting made with egg whites
