    He rubbed the seasoning on the raw chicken then he used the rest of the seasoning that he put on the raw chicken to make a sauce to put on the done chicken, also he tastes the seasoning from raw chicken.

    Idk why there are so many negative comments on this, I just wanted to thank you for creating this video. I'm a black British woman from the UK but I have not grown up in my culture so I'm trying to learn how to cook food from both my cultures (Nigerian & Jamaican). You give good advice, lots of different options and variations, and I am really excited to try this! I'll never make it as good as my aunty but at least I can try lol :) thank you

    Your question was addressed in a earlier comment -Using a blender is mentioned if you haven't the time to chop.
    I agree with the comments in the accompanying booklet we
    do mention longer marination for deeper intense flavour as
    well as heating the sauce or separation into two parts once
    for marination and the other for additional dressing.

      Yes! On top of that, all Tropical Sun products and "No salt" but pure salt and MSG from them dodgy seasonings. Finally, this just looks clapped nah? No colour. Anaemic.

    I've been making jerk for decades - using the Dunn's River jar stuff.
    That's always been great - but this recipe raises the bar.

    Seems like you would bite into a hard piece of pimento seed since it wasnt blended, id recommend using allspice (ground pimento seeds) with his method

      Syloney Hall If you wish, but you will get a different flavour even if the honey is caramelized. Unless you're using a smoked or spiced honey.

    I usually put my pimento in a bag and crush it. I do have Krups I usually use to grinds up whole herbs like cloves. I guess I could try to pimento on it too. I see a lot of jerk recipes calling for all-purpose seasoning. What is that? Seasoned Salt? Sazon? I've seen some use some type of coriander and garlic blend. I just made jerk yesterday, but I probably used too much of the liquid jerk seasoning. I will probably do it again when I replace a part on my grill.

    As for the comments when dealing with meat. The seasoning starts the cooking process. Also you of course clean any meat with water and citrus or vinegar. I am from Puerto Rico in the Caribbean and do the same. All of my family too. If you don't agree just don't do it.

    Everyone uses their phone on the toilet and almost nobody ever sanitizes their phone properly...
    Stop freaking out. There are way more daily hazards than this man tasting a marinade.
    A healthy adult won't drop dead because of tasting a tiny tiny bit of marinade that has touched raw chicken. My god, don't freak out so much. Also not every chicken in the world is contaminated with salmonella you know?
    It looked delicious and I am a white Dutch woman who really enjoyed this video and I will use some tips next time I am making jerk chicken.

    The natural seasoning used will surely give a good taste. Mi affi seh this still, when i buy from a jerk man in JA and the jerk looks like it was cooked for 4-5 mins👀 i cuss some B claat and take it home and re-cook it. Chicken wid bones in cannot be fully cooked in 4-5 mins...bredda dat a half raw meat and Jamaicans nuh play dem way deh. Jerk fi well done.

    The last video the guy said that Jerk chicken shouldnt be cooked in the oven, and if it is, its not jerk chicken. Jerk needs to be cooked in a drum pan with charcoal so it has the smokey flavour.

      There are many interpretations, in Portland they cook Jerk using a pit oven method and many regard Portland Jerk is the best in Jamaica.

    why are you teaching us to make jerk seasoning using the shop brought receipe? I live in Uk and you can easily find the all spice seeds, in fact I have the same brand your using.

      Amanda R Yes you are right. I would love to try yours, this demo was done for convenience. But yes you can wet jerk seasoning create from scratch and personalise to your own taste. I know some people who use a premade seasoning as a base as the seasoning flavours marinated and combined. Whereas with freshly made flavours haven't married intensely enough for deep flavour.

    Looks and sounds good, but I have a Jerk marinade that's much easier - granted, it may not be authentic, but tastes good anyway. It involves oil, orange juice, soy sauce, jerk seasoning, spring onions, peppers.
    Don't remember the portions though. I'll have to do a video

    next time just put the pimento into a dish towel and use the knife handle to beat and crush it if you don't have a blender. no body chop pimento seed with a knife you beat / pound it. 😲
