    Ingredients:
    1 red pepper
    1 yellow pepper
    2 red onions
    1 courgette
    2 aubergines
    1 bulb of fennel
    4 tablespoons olive oil
    2 tablespoons balsamic vinegar
    2 teaspoons salt
    For the tomato sauce
    1 onion
    1 bulb of garlic
    2 tablespoons oil
    3 x 400g tins of chopped tomato
    2 bay leaves
    Leaves from a few sprigs of fresh thyme or 2 teaspoons dried thyme (optional)
    1 teaspoon salt
    ½ teaspoon freshly ground black pepper
    8 sun-dried tomatoes
    For the béchamel sauce
    800ml milk
    100g butter or 80ml sunflower
    80g plain white or spelt flour
    50g Cheddar cheese
    1 teaspoon salt
    ½ teaspoon freshly ground black pepper
    1 teaspoon grated nutmeg
    To assemble
    200g lasagne sheets
    150g Cheddar cheese

    Hi all, in case it is helpful to others... I cooked this tonight. Left out the fennel (not that keen on the taste) and added an extra zucchini. Veg cooking time: 35 minutes at 200 degrees seemed enough. Cooking time for assembled lasagne: 40 minutes covered in alfoil at 180 degrees followed by 15 minutes uncovered at 200 degrees to make the cheese on top golden..

    The food looks great and I'm happy you shared the recipe, but video is kinda off-putting by focusing too much on "looking good" with all the edits and slowmos. It feels more like an extended TV-commercial than a cooking segment. Also, the audio voice-over is really rough to listen to. Sounds overly compressed. Again, not taking anything away from the recipe, but yeah.... not feeling this kind of production plays well with the other content on Foodtube? Just my opinion

      I understand you want subscribers, but misrepresenting my 6 month old constructive criticism is not the way to go about it. At least take a moment to learn what it actually means "to hate" something. By the by, you telling me to "shut up" for making a perfectly sensible comment on the audio production is exactly what "hating" is. "Just saying".

      This is old, however. The lasagna is already cooked. Only the pasta needs to cook and the cheese to melt. So, just check that the cheese is brown. 20 minutes to 30 minutes or so.

    Wow, this recipe looks amazingly gorgeous. I love so much this twin brothers and his unique vegetarian dishes. As my 19-year-old daughter has left behind eating meat, this lasagna with so many vegetables looks fantastic. Thanks for sharing. And definitely I will try it for a Sunday lunch. xxx

    I made this tonight and it was absolutely delicious! I didn't put fennel in mine because I hate it, but I had a few mushrooms instead. Don't skimp on the sun dried tomatoes - they really do add a richness to it! So good! Mine was in the oven for about 18 minutes. Pasta cooked fine.

      Hey Michael, sorry I didn't respond in time. How did it turn out? I tend to bake most things at 180 degrees celcius and I don't have a specific time length either - just until it looks cooked. You're aim is really just to get the pasta cooked, the sauce warm, and the cheese golden

      Aleisha Kudrass I went back and watched it again x3..in the beginning, he mentioned 200 degrees...the uncooked noodle were a little too al dente. I have been reading that there are "oven ready" pastas, have to do a little research. I will make this again,this time trying cooked noodles. The roasted veggies was a great touch to the sauce. Thankx!

      Making this lasagne now and just found my comment here from 2 years ago. This recipe is still going strong! I will mention that I don't add cheese to the bechamel and I also don't use fennel in my version of this lasagne. You can modify it to your taste which is just great!

    I baked this for about 45 minutes. Use the appearance of the topping as your guide. Once the cheese is nicely browned, it's done. We all thought this was a fantastic recipe and wouldn't change a thing.

    Swapped out the fennel for celery and sun dried tomatoes for tomato puree. Also added a splash of red wine to the sauce.
    Utterly delicious!

    I have made this lasagne several times now and I love it! It is the best veggie lasagne ever, every time I make it it goes faster than the meat lasagne. Love the video and the format, not sure why all the comments relating to slo mo etc., keep it up Happy Pear 😀

    Great recipe and very tasty. But I had to guess oven temperature and cooking times. Also there should be a written method of cooking along with the ingredients list.

    Made it and loved it! The roasted vegetables make the sauce more flavorful. If you can get past the strange editing then I would highly recommend this recipe.

    Took these guys almost 5 minutes to prepare this meal..
    I'm still going at it, been at least one hour. Actually more now.. 😊 but what makes it bearable is the chardonnay in between breaks... Can't wait to eat... just gone in oven..

      +Max Mustermann Lasagne is actually any kind of layered dish. So, if you have slices of egg plant and you put meat (or whatever) in between - that's also a lasagne - it's not just pasta.

    From a logistic standpoint, I'd suggest to start the veg and most importantly the garlic about 30 minutes before you do the tomatoes souse and bechamel. I ended up having everything ready, including the already roasted veg and waiting for the garlic to soften in the oven all alone.
