How can this be implemented when you belong to a co-op that has assignments due weekly?
You can't. If you have chosen to be part of the co-op you have to follow their schedule. Co-ops can be great for some things, but that is a trade-off.
We belong to a co-op and I plan what I need to for the co-op, but for our home subjects I plan using the auto pilot course Pam talks about.
Would autopilot planning work for me, we use Bookshark and Sonlight for our homeschool?
100% it would. It would help you use that curriculum to suit you instead of being dictated by it.
