Thank u, Mary. I'm just trying to understand. I have the IP Duo cooking right now at the 2hrs Low P u recommend. But why do I have to drink jello to get the benefits of the collagen? Won't my gi tract break it down anyway? So, is it "destroyed" by greater heat or pressure? Or is it simply further digested? Or is that collagen going to absorb directly thru the stomach? See what I'm saying? It might be better thicker for skin applications but why drink jello? Seems kind of disgusting? Ya know?thx 🤗
Mob Barley - Thank you so much for visiting. I am so sorry that I did not make it clearer. You Do not drink it in it’s gel form. You warm it gently and drink it in its liquid form. I am not a scientist but from what I have read, yes, the collagen is absorbed by your stomach (gelatin is cooked collagen). Hope that makes sense. This is a great pressure cooker bone broth tutorial. After 3 minutes I was thinking, "Is she really going to babble for half an hour on this subject?" But then you talk about the science behind time and temperatures and why the low pressure setting should be used and why it shouldn't go over 2 hour, and why wine or vinegar is added. There's so much useful information that a lot of other tutorials gloss over. You reinforced everything I know about making bone broth and I learned a few things as well, or at least the reasons why. I used to only do bone broth the old slow way. When I started using a pressure cooker it took some trial and error to get it right. I wish I would have had your tutorial a few years ago. It makes much more sense than many out there. Explaining the reasons why certain processes work is key. Thank you!
I recently discovered that salad spinners are fantastic for getting a little bit more of that broth you worked so hard to create out of the meat and bones left in the pot.
Great tip. I decided to try a second small batch with new veggies to use for the base of my soup, adding about 2-3 cups broth from the first batch. I also saw a chef take the big veggies and puree them to add back to the broth, which I plan to use in my soup base. It will make it go farther.
Great video. I guess indirectly I made turkey bone broth last week. While the butterflied turkey was in the smoker,. I took the backbone, neck, tail with veggies and simmered them for 4+ hours. Strained it for adding to the turkey drippings to make gravy. Then on Sunday I simmered the turkey bones and meat for several hours. Strained the broth and added carrots, celery and potatoes to the broth to boil until cooked. Separated the meat from the bones, added cooked egg noodles and the meat back into the broth. Very tasty!
After getting my instant pot, I switched to using that for my stock or broth, but now I will revert back to to stove top method. I freeze leftover bones and clean vegetable scraps for stock or broth. It is a staple in our family. I have one tip for freezing the broth. After it is chilled and the fat is removed, freeze some of it in ice cube trays and transfer to freezer bags. It is handy when you need just a little broth.
Hi Mary 😊 for my bone broths in instant pot I found that cooking 10-20 hours on low slow cooker setting works best for the most gelatin jiggly bone broth. 24 hours probably better but I just did 20 and it was perfect. Doing it quickly just did not work for me so since it has slow cooker option I just used it.
Another great bone broth video, Mary. We have finally started drinking a cup every morning and are feeling better already :-) I was glad to hear you mention using the "low pressure" setting as I had just read this and was going to ask your opinion about it. I probably missed this point in all of your other videos. I'm scattered brained some days LOL

The day after Thanksgiving or Christmas my dad would take all the meat of the bones of the Turkey and put it aside. He'd put all the bones and cartilage and some skin in a tall pan of water on the stove, boil them very slowly for a couple hours until the water was cloudy. He then would take all the bones and skin out with a strainer. We would have onions, celery, Carrots cut up to throw in there. He also put in chicken broth and beef broth. Cook that until the vegies were tender then put in the cut up Turkey. We would ladle that soup into a bowl with rice. I'm 78 now and all my life since I was a little girl my family did it this way. We just got an Instant pot and my son does the cooking in it because I can't stand up too long at a time. He's not patient enough to make Turkey broth and store it away. If I didn't have arthritis I would be making Turkey broth like you do and storing it so that I could have Turkey soup any time I wanted, just add the vegies.

I just made my first turkey bone broth... oh, my gawd... it was the most delicious broth I have EVER tasted, bar none! I did cook it in my slow cooker, and on low it seemed a bit high simmer to me. Waiting to see if I get gelatin... either way, best sipping broth and will make a base for home made soup. In my broth, I used 1 TBS apple cider vinegar, 2 small bay leaves, 3 small sprigs rosemary, a sprig of thyme, 1 tsp black peppercorns, and I threw in all my small garlic cloves that equalled approx 6-8 regular cloves, 2 carrots, celery, onion skins, turkey carcass that I roasted after removing the meat. I am totally sold on making my own broth from now on... I never knew it could be this good and nutricious. Thanks for the inspiration!

I love how you explained the Instant Pot venting system because I struggled with how the vent worked so much when I first started using it, very often pushing the little toggle over too much for the pressure setting so it wouldn't work right. I wish someone would have told me how it worked when I first got it. This whole video have been extremely helpful. Thank you!
Hi ! Thank you so much for this wonderful bone broth videos I am learning so much ♥️ I have successfully made two batches of beef bone broth. I am just wondering why my broth is spoiling after a few days? I cannot seem to get past three days of storing the broth before it goes bad, especially after removing the fat layer.
Thanks for visiting and for the kind words. YEs, bone broth, once the fat layer is removed, will only stay fresh in the fridge for 3-4 days. With the fat layer on, it can stay fresh for about 1-2 weeks - there is variation depending on how thick the fat is. In the freezer, it can stay fresh for 2-3 months IMHO but others have told me that they found it to be fresh after 6 months. You just have to watch for freezer burn. The only time I've ever bought chicken feet is from the pet store. They sell them dehydrated as dog treats. My dog loved them. He chewed on them and we stepped on chicken feet for days all across the apartment. I miss him.
Hi just discovered your channel! I know this is an older video but I just made bone broth for first time in my instant pot. I just strained it through a spaghetti strainer before I found your video and poured into 1 cup glass jars. BUT I didnt strain it over cheese cloth! Do I have to start over? Or is it safe to drink?

Hi Mary, I love your videos and have your recipe for Apple Cider Vinegar brewing on my back counter, I’ve made a whole chicken & bone in turkey breast according to your instructions and they were delicious. I’ve been making bone broth for years the old fashioned way but I’m ready to try your way. I have a turkey carcass and 2 chicken carcasses along with 6 chicken feet defrosting as I write. My question is: Can you make the broth with frozen or partially frozen carcasses, if so how long should it cook and should it still be cooked on low pressure? Thanks for all your help
Hi Mary. I made turkey bone broth yesterday exactly as you instructed, and it came out good. I screened it thru a strainer and farm towel exactly as you did and it looked and smelled wonderful. I strained it into a second Instant Pot pot, and put it in the refrigerator. This morning I took it out to skim off the fat, which I did, but was surprised to see that there was no more liquid. It was ALL jelly - 3-inches deep! Is that normal? What do I do with it?
Hi Chuck, That is perfect!! Just what you want. Once you rewarm it, it will become liquid again. You can rewarm it to transfer it to your storage containers or just spoon it in its gelatinous form. But know that you do not need to make sourdough bread with sprouted flour. You can use yeast with sprouted flour because you have all the benefits of the sprouting process. However, if you want to use sprouted flour to make sourdough bread you will get double the benefits! Both from the sprouting and the souring!! Good news!! Here’s a recipe you can try. 2 cups spinach (fresh) 1/4 cup cilantro (fresh) 2 cups vegetable or chicken broth 1/2 avocado 1/4 to 1/2 lemon (juiced) taste 1/2 teaspoon chili powder or to your liking 1/8 teaspoon ground cumin or to your liking 1 pinch cayenne pepper 1 pinch sea salt or to your liking 1 pinch fresh ground black pepper or omit This is like a fiesta smoothie. Play with it and make it your own. Take care!

Thank u, Mary. I'm just trying to understand. I have the IP Duo cooking right now at the 2hrs Low P u recommend. But why do I have to drink jello to get the benefits of the collagen? Won't my gi tract break it down anyway? So, is it "destroyed" by greater heat or pressure? Or is it simply further digested? Or is that collagen going to absorb directly thru the stomach? See what I'm saying? It might be better thicker for skin applications but why drink jello? Seems kind of disgusting? Ya know?thx 🤗
You will want to gently warm your bone broth before you drink it. The gelatin will dissolve with the heat. And add a bit of sea salt. It's delightful. Love, Mary
Well, I did what u suggested, the 2hrs at low p. Took a half pint jar sample from that, then set it at Hi P for 2 additional hrs & the cooker sat on warm for several hrs while I was at work. The first batch was complete collagen with fat on top, & the second batch was also complete collagen but about twice as dark. I have theory after listening to several well informed posters & commenters: because a traditional full steel pressure cooker reaches high enough pressure/heat for canning but an Instant Pot does not, that is what the authors/experts were referring to when expressing concerns over damaging collagen content. Just fyi. Thnx
Canning both? Couldn't possibly drink that much bone broth and love cooking with my own broth. I have frozen both but it took a lot of room. I have also loss a bunch of food from power outage. So I like to can it. But what I am understanding that, I have damage the broth by canning it. What to do?
Hi Nik, Thanks for visiting. Yes, canning can present certain problems because of the extended high temperatures involved with pressure canning. However, if that is your only option, it still makes sense to can your bone broth, even if some of the gelatin will be damaged. The bone broth will still be high in protein a minerals. Looks delicious but I'll still do the low and slow method. Right now I'm cooking up a big batch of split peas (Mom gave me a couple of bags of dried ones) with some leftover ham I cubed up. It's been simmering for hours. Daniel has been whining that he didn't get to meet his maternal grandfather but he died 23 years ago and Daniel is 11 so they had no chance to meet. I don't know how he can miss someone he's never met or interacted with. For instance I never met my biological paternal grandmother as she did in a train accident while my father was still younger and my Aunt Kathy only lived one day so I didn't meet either of them. I met both my maternal grandparents but they died when I was in Elementary school and I only knew them when I was three to five and I don't remember them. I more miss Thomas daily. I miss my father, Uncle Johnny, Aunt Linda, and Uncle David around the holidays when I normally saw them.
@@MarysNest Happy New Year! I might be since Daniel will be going to sleepover tomorrow. I cherish my alone time since I'm' an introvert and need it to recharge. It helps that no one will interrupt what I'm doing.
PLEASE NO MORE INSTANT POT, There are at least 100 channels promoting Instant Pot. 1. I do not have space for another appliance. 2. I can't afford one. 3. I want to use my own pans. 4. I only cook for one person and the pots make to much. I really enjoy your videos that are not Instant Pot. Abie

Thank u, Mary. I'm just trying to understand. I have the IP Duo cooking right now at the 2hrs Low P u recommend. But why do I have to drink jello to get the benefits of the collagen? Won't my gi tract break it down anyway? So, is it "destroyed" by greater heat or pressure? Or is it simply further digested? Or is that collagen going to absorb directly thru the stomach? See what I'm saying? It might be better thicker for skin applications but why drink jello? Seems kind of disgusting? Ya know?thx 🤗
Mob Barley - Thank you so much for visiting. I am so sorry that I did not make it clearer. You Do not drink it in it’s gel form. You warm it gently and drink it in its liquid form. I am not a scientist but from what I have read, yes, the collagen is absorbed by your stomach (gelatin is cooked collagen). Hope that makes sense.

This is a great pressure cooker bone broth tutorial. After 3 minutes I was thinking, "Is she really going to babble for half an hour on this subject?" But then you talk about the science behind time and temperatures and why the low pressure setting should be used and why it shouldn't go over 2 hour, and why wine or vinegar is added. There's so much useful information that a lot of other tutorials gloss over. You reinforced everything I know about making bone broth and I learned a few things as well, or at least the reasons why.
I used to only do bone broth the old slow way. When I started using a pressure cooker it took some trial and error to get it right. I wish I would have had your tutorial a few years ago. It makes much more sense than many out there. Explaining the reasons why certain processes work is key. Thank you!
I recently discovered that salad spinners are fantastic for getting a little bit more of that broth you worked so hard to create out of the meat and bones left in the pot.
Great tip. I decided to try a second small batch with new veggies to use for the base of my soup, adding about 2-3 cups broth from the first batch. I also saw a chef take the big veggies and puree them to add back to the broth, which I plan to use in my soup base. It will make it go farther.
Great video. I guess indirectly I made turkey bone broth last week. While the butterflied turkey was in the smoker,. I took the backbone, neck, tail with veggies and simmered them for 4+ hours. Strained it for adding to the turkey drippings to make gravy.
Then on Sunday I simmered the turkey bones and meat for several hours. Strained the broth and added carrots, celery and potatoes to the broth to boil until cooked. Separated the meat from the bones, added cooked egg noodles and the meat back into the broth. Very tasty!
After getting my instant pot, I switched to using that for my stock or broth, but now I will revert back to to stove top method. I freeze leftover bones and clean vegetable scraps for stock or broth. It is a staple in our family.
I have one tip for freezing the broth. After it is chilled and the fat is removed, freeze some of it in ice cube trays and transfer to freezer bags. It is handy when you need just a little broth.
Hi Mary 😊 for my bone broths in instant pot I found that cooking 10-20 hours on low slow cooker setting works best for the most gelatin jiggly bone broth. 24 hours probably better but I just did 20 and it was perfect. Doing it quickly just did not work for me so since it has slow cooker option I just used it.
My grandparents died when I was young (still am I guess lol) so it’s making me so happy to hear you talk!

I have an 8 quart Duo Evo Plus. If you use the "Keep Warm" setting, you have the opportunity to set a custom temperature (I.e. 180 deg F).

The day after Thanksgiving or Christmas my dad would take all the meat of the bones of the Turkey and put it aside. He'd put all the bones and cartilage and some skin in a tall pan of water on the stove, boil them very slowly for a couple hours until the water was cloudy. He then would take all the bones and skin out with a strainer. We would have onions, celery, Carrots cut up to throw in there. He also put in chicken broth and beef broth. Cook that until the vegies were tender then put in the cut up Turkey. We would ladle that soup into a bowl with rice. I'm 78 now and all my life since I was a little girl my family did it this way. We just got an Instant pot and my son does the cooking in it because I can't stand up too long at a time. He's not patient enough to make Turkey broth and store it away. If I didn't have arthritis I would be making Turkey broth like you do and storing it so that I could have Turkey soup any time I wanted, just add the vegies.

I just made my first turkey bone broth... oh, my gawd... it was the most delicious broth I have EVER tasted, bar none! I did cook it in my slow cooker, and on low it seemed a bit high simmer to me. Waiting to see if I get gelatin... either way, best sipping broth and will make a base for home made soup.
In my broth, I used 1 TBS apple cider vinegar, 2 small bay leaves, 3 small sprigs rosemary, a sprig of thyme, 1 tsp black peppercorns, and I threw in all my small garlic cloves that equalled approx 6-8 regular cloves, 2 carrots, celery, onion skins, turkey carcass that I roasted after removing the meat. I am totally sold on making my own broth from now on... I never knew it could be this good and nutricious. Thanks for the inspiration!

I love how you explained the Instant Pot venting system because I struggled with how the vent worked so much when I first started using it, very often pushing the little toggle over too much for the pressure setting so it wouldn't work right. I wish someone would have told me how it worked when I first got it. This whole video have been extremely helpful. Thank you!
Hi ! Thank you so much for this wonderful bone broth videos I am learning so much ♥️ I have successfully made two batches of beef bone broth. I am just wondering why my broth is spoiling after a few days? I cannot seem to get past three days of storing the broth before it goes bad, especially after removing the fat layer.
Thanks for visiting and for the kind words. YEs, bone broth, once the fat layer is removed, will only stay fresh in the fridge for 3-4 days. With the fat layer on, it can stay fresh for about 1-2 weeks - there is variation depending on how thick the fat is. In the freezer, it can stay fresh for 2-3 months IMHO but others have told me that they found it to be fresh after 6 months. You just have to watch for freezer burn.

The only time I've ever bought chicken feet is from the pet store. They sell them dehydrated as dog treats. My dog loved them. He chewed on them and we stepped on chicken feet for days all across the apartment. I miss him.

I just strained it through a spaghetti strainer before I found your video and poured into 1 cup glass jars. BUT I didnt strain it over cheese cloth! Do I have to start over? Or is it safe to drink?

I love your videos and have your recipe for Apple Cider Vinegar brewing on my back counter, I’ve made a whole chicken & bone in turkey breast according to your instructions and they were delicious. I’ve been making bone broth for years the old fashioned way but I’m ready to try your way. I have a turkey carcass and 2 chicken carcasses along with 6 chicken feet defrosting as I write. My question is: Can you make the broth with frozen or partially frozen carcasses, if so how long should it cook and should it still be cooked on low pressure? Thanks for all your help

Hi Mary. I made turkey bone broth yesterday exactly as you instructed, and it came out good. I screened it thru a strainer and farm towel exactly as you did and it looked and smelled wonderful. I strained it into a second Instant Pot pot, and put it in the refrigerator. This morning I took it out to skim off the fat, which I did, but was surprised to see that there was no more liquid. It was ALL jelly - 3-inches deep! Is that normal? What do I do with it?
Hi Chuck, That is perfect!! Just what you want. Once you rewarm it, it will become liquid again. You can rewarm it to transfer it to your storage containers or just spoon it in its gelatinous form. That is SO rich in gelatin!! Wonderful for your gut and your joints, skin, hair, and nails! Love, Mary

Hi Lisa, Thanks so much for visiting! That is a great question. Yes, you can certainly use sprouted flour to make sourdough bread. But know that you do not need to make sourdough bread with sprouted flour. You can use yeast with sprouted flour because you have all the benefits of the sprouting process. However, if you want to use sprouted flour to make sourdough bread you will get double the benefits! Both from the sprouting and the souring!! Good news!! 2 cups spinach (fresh)
1/4 cup cilantro (fresh)
2 cups vegetable or chicken broth
1/2 avocado
1/4 to 1/2 lemon (juiced) taste
1/2 teaspoon chili powder or to your liking
1/8 teaspoon ground cumin or to your liking
1 pinch cayenne pepper
1 pinch sea salt or to your liking
1 pinch fresh ground black pepper or omit
This is like a fiesta smoothie.
Play with it and make it your own. Take care!

Thank u, Mary. I'm just trying to understand. I have the IP Duo cooking right now at the 2hrs Low P u recommend. But why do I have to drink jello to get the benefits of the collagen? Won't my gi tract break it down anyway? So, is it "destroyed" by greater heat or pressure? Or is it simply further digested? Or is that collagen going to absorb directly thru the stomach? See what I'm saying? It might be better thicker for skin applications but why drink jello? Seems kind of disgusting? Ya know?thx 🤗
You will want to gently warm your bone broth before you drink it. The gelatin will dissolve with the heat. And add a bit of sea salt. It's delightful. Love, Mary
Well, I did what u suggested, the 2hrs at low p. Took a half pint jar sample from that, then set it at Hi P for 2 additional hrs & the cooker sat on warm for several hrs while I was at work. The first batch was complete collagen with fat on top, & the second batch was also complete collagen but about twice as dark. I have theory after listening to several well informed posters & commenters: because a traditional full steel pressure cooker reaches high enough pressure/heat for canning but an Instant Pot does not, that is what the authors/experts were referring to when expressing concerns over damaging collagen content. Just fyi. Thnx
Canning both? Couldn't possibly drink that much bone broth and love cooking with my own broth. I have frozen both but it took a lot of room. I have also loss a bunch of food from power outage. So I like to can it. But what I am understanding that, I have damage the broth by canning it. What to do?
Hi Nik, Thanks for visiting. Yes, canning can present certain problems because of the extended high temperatures involved with pressure canning. However, if that is your only option, it still makes sense to can your bone broth, even if some of the gelatin will be damaged. The bone broth will still be high in protein a minerals. Hope this helps.

I found chicken feet at a local natural store, but large PKG, frozen. Can I refreeze them in smaller portions?
Hi Heather, Yes, you can allow them to defrost just to the point that you can separate them - then re-wrap them in the portions you want and then re-freeze them. Can I pressure can the broth after I make it

I generally don't recommend that because the extended high temperatures can be damaging to the gelatin but I do know canners who have done it and are happy with the results. Hey lovely lady! Can you make bone broth from duck bones? My husband cooked two ducks over the Christmas break (very delicious and tender), however, there was a lot of bones that were tossed out. It would be great if we could repurpose them. What are your thoughts? Thanks ;- )

Looks delicious but I'll still do the low and slow method. Right now I'm cooking up a big batch of split peas (Mom gave me a couple of bags of dried ones) with some leftover ham I cubed up. It's been simmering for hours. Daniel has been whining that he didn't get to meet his maternal grandfather but he died 23 years ago and Daniel is 11 so they had no chance to meet. I don't know how he can miss someone he's never met or interacted with. For instance I never met my biological paternal grandmother as she did in a train accident while my father was still younger and my Aunt Kathy only lived one day so I didn't meet either of them. I met both my maternal grandparents but they died when I was in Elementary school and I only knew them when I was three to five and I don't remember them. I more miss Thomas daily. I miss my father, Uncle Johnny, Aunt Linda, and Uncle David around the holidays when I normally saw them.

PLEASE NO MORE INSTANT POT, There are at least 100 channels promoting Instant Pot. 1. I do not have space for another appliance. 2. I can't afford one. 3. I want to use my own pans. 4. I only cook for one person and the pots make to much. I really enjoy your videos that are not Instant Pot. Abie
Hi Susanna, No problem at all. I have lots of videos coming out for the rest of the month and the coming months that do not use the Instant Pot. I've got a homemade Ricotta Cheese video coming out tomorrow and later and then next week, I have a nice stove top soup video that is ready in 10 minutes - start to finish!! You'll love that!!
