This SALAD is a feast for both the eyes and the taste buds.
Oh the Pomegranate!!!! gorgeous! I never let a salad out the door without some sort of fruit in it. Kale and Brussels are wonderful but not for the beginner salad eater. These greens seem to require a more sophisticated palette when it comes to getting someone to "eat their greens" lol. The "full spa treatment" to the Kale certainly does help with texture. I was waiting for some walnuts or pecans!. That dressing is a no brainer, always a hit. Hope you made more than this. I could eat all of they myself LMAO! Stay amazing and PEEEEEEEEEEEAAAACCCCCCCE!

Great recipe, but there's a much better trick for the pomegrenate! Cutting it in half and beating the skin of each side with a wooden spoon, over a medium-size bowl. Sounds crazy but it works great!

I made it! So good! My husband won't eat so much kale so i had to use a sneakier quantity plus some romaine. And i added green beans because i somehow got three times more for Thanksgiving than i needed. I loved all the flavors and textures 💚

Beautiful, and looks delicious! But one idea- i used to compost the kale ribs, but now I cut them up and sauté them longer than the leafy part to not waste them.

Thanks for including vegetarian. I am a long time vegetarian but will eat vegan as well for planet and animal life. I have a hard time getting in my proteins which then drops my blood sugars,. This was a lovely recipe.

Andrew, how do you plan out grocery shopping for a week?
This recipe includes 1/2 a butternut squash, so ideally another meal in the week would use butternut squash too... but then how do you make sure to use everything without tons of similar dishes?

Good question! Im looking to make a video on the topic. it can seem like a juggling act at first but once you have a method down, its cake! I have a few different ways I start the planning process. And really its a few questions i ask myself and then I go searching for the answers:
- What is already in the house? (this helps use up leftovers and deplete my pantry/freezer)
- What HARD staples do I want to get? (this helps with getting food that last and have further expiration dates but also with not needing to repeat flavor too often and have to endure the food boredom)
- What do I want to eat? (Gives me a chance to address the possibly of leftover ingredients and plan how to flavor any overlaps. for example - a salad will be todays meal with butternut squash, then i will use the squash in place of sweet potatoes to make a curry)
I understand that feedback can be much to ponder without enough context. Hopefully that video will provide more transparency and guidance. Should be in the queue for Jan.

Wow, wow & wow!!! This salad looks really scrumptious. I never thought to eat brussels sprouts without cooking & put directly into a salad. With brussels being a cruciferous veggie, I'm sure the nutrition is even more intense raw, for sure. That dressing looks really delectable, too. I do have one questions, though. The pomegranate arils are so beautiful in the salad, but do you eat them like seed & all when eating the salad? Is that cool...or...do-able? I don't know which is why I'm asking
