I like to put the squash in a colander and let it drain for a few hours. It keeps the casserole from getting too liquidy.

Would this work without the cheese to make it dairy free or do you think I should use vegan cheese instead?
Since the eggs are a great binder, you won't need the cheese for it to hold together. It does contribute to the flavor, though, so you might need to add a little extra salt when making it dairy-free. Let me know if you experiment with it!

Eggs, bacon, and cheese are 3 of the worst things you can put into your body, so I'm not sure why you are calling this "healthy"...
This is healthier version of a casserole my family made (which also called for a loaf of bread and heavy cream) so adding in 3 pounds of veggies is certainly an improvement, but perhaps I will work on a vegan version next!
This recipe is great for those people who love the bacon, cheese and eggs in a flavourful way it shows moderation and it can be part of a healthy diet. Thank you for sharing and now I can choose to include in my meal planning or not.
Nothing wrong with eggs. Period. My brother and I were on the ketogenic diet and had 4-5 eggs each daily for over a year. We never felt better. Even our skin became more youthful looking and we were in our 50s at the time. The anti egg community has no clue.

"In fact, consuming eggs regularly can raise your high-density lipoprotein (HDL) cholesterol, otherwise known as “good cholesterol.” People with high HDL cholesterol levels are at a lower risk of developing heart disease or stroke, while people with high LDL cholesterol have a higher risk."
I used to weigh 340 lbs. After the ketogenic diet I got down to 185 lbs. My health vastly improved, and I was eating a lot of butter, eggs, bacon with lots of vegetables. Two meals a day without feeling hungry. The heart palpitations (arrhythmia) I was having during my heavy weight days disappeared completely. Bye👋
