I make great almond milk about once a week thanks to this video.
5 hours is enough soaking time for naturally sweet almond milk. Avoid allowing fermentation.
Do not blend the mixture past a slightly warm point. 38 degrees Celsius or 100 degrees Fahrenheit. This is a good point to stop blending.
Judging by touch, during blending if you can feel warmth on the Vitamix vessel but it is not too hot to keep touching, that is when you can stop blending the mixture.
You want to avoid actually cooking the liquid. Otherwise the resulting almond milk's texture will be a bit slimy.
You can improve the texture of the almond milk if you replace one cup of water with a 1.5 cups of ice. This will allow you to blend longer before reaching the 100 Degrees Fahrenheit limit.
Warning: If you soak the almonds more than 6 hours at room temperature fermentation will begin. The result will be a sour almond milk.
The intensity of the sourness will be stronger the longer the almonds soak.
Warning: Do not let the mixture stand. Squeeze out the mixture immediately. Otherwise the mixture will ferment rather quickly.
If you allow fermentation, the milk's shelf life will dramatically shorter. It will become undrinkable in as little as 3 days. Even when refrigerated immediately after processing.
Made properly and immediately refrigerated, I have had almond milk remain good for as long as 10 days.

Are you able to put your almond milk in tea without it separating? The milk i have made in the past was horrible in tea so have been sticking to shop bought.

That insta-regret after popping almond pulp into his mouth was hilarious. Felt so bad for him while he spent the next 2 minutes trying to discreetly get that taste off of his tongue. I remember being a kid and tasting a big spoon of cocoa powder-sure it would taste just like chocolate!

+Carla - I don't know if all the minerals make it into the finished product, but Brazil nuts are very high in selenium. One cup of Brazil nuts is 2,549.6 µg of selenium. That's 6.374 times the published Tolerable Upper Intake Level of 400 µg for selenium. Just FYI.

I would wash my bag by hand instead of putting it with other dirty towels, or whatever. Plus I don't want it to smell like fresh meadows, Ha! Cashew milk, too! You don't even know if there are almonds in the store bought version, at least not many. The Vitamix, also helps the it get creamy. I love mine. Try adding both together to make your store bought even better.

Thanks for the video :) I took your advice and strained the milk first, then put it back in the blender and added a tsp of vanilla. I can sweeten it on the fly on a per glass basis, depending on what I'm in the mood for at the time. It's easy to make, and clean up is a breeze. The only problem is it makes my throat a bit itchy, but nothing I can't handle-at least I know what nut it is in mixed nuts that usually has that effect on me!

he's normally excellent. This video was just WOW.
he squeezes the bag without saying he had washed his hands.
And afterwards, with the almond milk all over his hands, he looks right at the sink, but instead of excusing himself and running to the sink while the chef continued, he rubs his hands on his apron. And worse, he runs his hands through his hair which means he almost certainly touched his hair or his face or objects before he squeezed the bag. All that almond milk is now in his hair.

Store-bought almond milk is useful, in that you know exactly how many calories per cup you're getting right on the front of the container. I usually go for the 25 calorie almond or cashew milk. I like the idea of making the milk in the Vitamix but it would be much more difficult to know exactly how many calories per cup you're getting.

Question: if the Vitamix can liquefy all the fiber from other ingredients (as described in an unrelated Vitamix floor demo), why does it not also liquefy the almond pulp? and if it is able to, e.g. perhaps if left to blend longer, are there other reasons that you would not want to blend the pulp into the milk? Thanks for anyone's thoughts.

at it most finely blended, there's a difference in texture / mouth feel between filtered and non. but vitamix stopped selling filtration bags on their website so there's something to the whole-food-juice school of thought for almond milk here

Does anyone know what type of filtration bag she is using? It seems.... at least..... legit.... and I haven’t had good luck with cheese cloth..... anybody know what exactly she is using here?

When I soak my almonds I put fulvic acid in the water and I do it for 24 hours. This will remove the outer layer of the almonds.

Toward the end, was it really necessary to bring up that the fresh almond milk will never replace your cartoned almond milk, and crush her heart? Awkward! Wait until she leaves at least, or maybe get the pulp taste out of your mouth first.

Lenny thinks acting like a simpleton is cute. He is obviously a smart guy considering his previous occupation. It's an act. A joke. Seriousness is boring.
BUT if the act gets in the way of a guest it is rude. The guest however understood the situation and presented well.
