  • 3-INGREDIENT EGGPLANT LASAGNA (Gluten Free!):
    1-2 eggplant, sliced
    1 can tomato sauce
    1-2 C. shredded mozzarella cheese
    Alternate layers of eggplant, sauce, and cheese in a 9x13 baking pan until you run out of each. Sprinkle a final layer of cheese on top (if desired for appearance) and cover with foil. Bake at 350 for about 40 minutes or until the eggplant is tender. That's it! You did it - gluten free the easy way. Enjoy!
