      Dear Lifei: Would it be possible to buy almond meal (pre-grounded) rather than chop whole almonds in a blender/processor? At least, one would get a head start.

      If you put the cooked almonds on a new roomtemperature cookie sheet and then put the cold (not frozen) almonds into the 64 oz container and aggressively tamper while being on the ten setting it takes less than two minutes and turns out perfect. Be sure to use four cups of raw almonds to start.

      I’ve always wanted to try almond butter, but never have. It’s kind of expensive and I am on a very limited budget because I live on nothing more than Social Security income. I have to go to the food pantry for food security…
      They have never given me any almonds or peanuts, but they have given me a few bags of walnuts and pecans though. Do you think those would make decent nut butters or no? I don’t think I’ve seen anyone make nut butters with those types of nuts. I was randomly gifted a Vitamix last Christmas from my mother, so I would like to experiment with making a nut butter one of these days with it!

    I already changed 3 containers. Vitamix said you can't make a butter running the machine for more than 1 min. otherwise the connector (I don't know how it calls) pops out from the bottom of the cup and it becomes wobbly.

You are making nut butters and you are running the machine too long. When processing nut butters you cannot run machine more than one minute. If you run machine too long the container gets very hot and it will start to melt causing the blade to melt into the container. "

      My Vitamix (Ascent 2500i) overheats and shuts down when I make nut butters. I have to wait about 20 minutes to continue. So whenever I want to make nut butters I have to make sure I'll be at home at least 2 hours. I get there in the end, but I just can't complete the whole blending in a single session.

      @@Sylphadora Thanks. I just placed an order for the European version too. Have you read through the manual? I heard somewhere about not using it for too long because of overheating.
      Apparently EU version is different from USA version because of the safety requirements. This is why some of the containers in USA sites cannot be used for EU version. Thats what I was told when I enquired about purchasing USA containers. So I'm guessing maybe that's why some have issues with the usage and some don't ....
      are you still facing the same issues now?

    Love this recipe. Have made it several times! Not sure I would say I would NEVER buy store bought almond butter again though as Natural Grocers and Whole Foods make almond butter that is very similar to this. Thanks for the vid!

    Hello! I’m new to your channel. Love this video and can’t wait to watch all your others and get caught up. I’ve never even had a blender before and I’m 65. I must have been living under a rock or something. Also have just started the WFPB lifestyle but with no oil, salt, nor sugar due to heart issues. After doing lots of research (including your channel) I went with a Vitamix re-conditioned Standard C series.

    I tried this yesterday. Toasted the 4 cups for 10minutes, let them cool, etc. But I started on speed 10 and it took exactly one minute and I got the most magical almond butter. Not runny but not too thick. Perfection!

      Is the A3500i the most efficient/powerful model blender most suitable for smooth nut butter consistency macadamia/wallnuts? Or is there a better vitamix model o ly dedicated to nut butter?

    the newer Vitamix blenders are probably quieter than my 7500, but I recommend wearing ear protection when making vitamix nut butters. It takes a while, is loud, and needs constant tampering! It’s so worth it but please keep your hearing!

      That's a great point....I always wear ear protection when I'm making peanut or almond butter.....or if I'm making a soup or something where it runs for several minutes. I probably look a little silly....but it does get a little loud if you're standing right in front of it.

    I've been making homemade almond butter in my Vitamix for about 15 years now, which I started doing because nobody was selling organic sprouted almond butter at the time, let alone even regular, non-organic almond butter. I used to have to buy organic almonds, sprout and dehydrate them, then blend them down in the Vitamix. We've come a long was since then, and now you can buy sprouted almonds, almond butter, organic sprouted almonds, organic almond butter, and even sprouted organic almond butter (which is the most difficult to find and quite expensive). Roasting the almonds first makes for the best flavor and texture, but I don't mind losing a little bit of that the way I make mine (if using sprouted almonds, it's best to go slow so it doesn't get too hot while blending them in the vitamix). Also, Vitamix's have come a long way since I bought mine in 2008!- nut butter and cleaning cycle settings?! Great video!

    Since I am very picky I decided to try the almonds in the 8oz container. It came out smo-o-o-o-oth as silk. That being said, I prefer the peanut butter I made. Thanks for a really straight forward video.

    I was making hazelnut butter and viewed this just to see how long it takes in the vitamix. I have made it in a food processor before so giving the vitamix a try. It is SO much creamier in the vitamix I love it. I will make this almond butter as soon as I finish my hazelnut butter.

    i make mine usually between 1.5 to 2 mins.. I was scared at first but finally understood vitamix lol. I make it a point that it's not less than 4 cups.. the more the nuts, the better it blend.. and just blend it at max! works all the time.

    1 tip. To cool it faster. Keep another baking tray ready. Just shift them onto that tray and slide into the fridge.

    Thank you for sharing! I made some almond butter in my Vitamix, and it turned out great! The only difference is that I roasted some cocoa beans, I took half a tea spoon of brown sugar and crushed it to powder, and also added 100% vanilla extract to it, and it turned out delicious! I might try out making regular almond butter one day, but I think I'll be repeating that experimental recipe I decided to try once again once I finish it :)

    I make this once a month. It is amazing but there is a learning curve due to oven differences.
    Here in Japan I use a convection oven that is small by American standards.
    My oven temperature in selected by increments of 10, so I bake the almonds at 180 Celsius.
    I bake them for exactly 14 minutes and remove the immediately to cool.
    During processing I use 3 tablespoons of coconut oil to make the resulting almond butter smoother and more easily spreadable / less thick.

      Vanessa, it's your best investment, I bought my Vitamix whole nutrition center, model 5000, in the year of 2000, I use it practically everyday, I looked very beautiful and younger than my age at 72 years, I don't even exercise. Way to go girl. Blessings

      best way I've discovered is to pop it into the dishwasher, it comes out as brand new every time only 1 thing to note here take it out as soon as cycle is finished

    I've always put my nuts in the blender warm when I about to make any nut butters. It's easier that way because the oils are already warmed up so it cuts down the time to make the nut butter. Plus I sprout them first too. It taste even better that way. Trust me!

    I used a food processor added a pinch of salt and about a tablespoon of honey it took about 10 minutes and turned out perfect…put the nuts in the blender while they are still warm it releases the oil better

    I started with roasted almonds... It literally took me longer to clean the pitcher after than making the almond butter. Unbelievable. Best protein shake of my life with the remnants of the almond butter. WOOOO! Mine was also very fast to make and I started with roasted almonds. I have the 7500.

      I saw where Vitamix recommends cleaning sticky stuff using two cup of distilled white vinegar and one cup of warm water~~just fyi in case someone else sees this!

    Hi, I'm about to purchase my first Vitamix and I hope you can help me out with a couple of questions. Apart from the self clean program and the timer/remote touch screen feature thingy, (I actually prefer the 'old fashioned' button model on the A2500) what's the difference between between the A2550i and the A3500i. Apart from those 2 features, what can't the A2500 do that A3500 can? Thanks for your help. Abbe

    If you leave almonds hot then they will release oils with ease and time decrease to 2 minutes. So putting them into oven is step to make them hot to make almond butter easy.

    Does your container lock in place? I have a 5300 and it does not lock in place, which is a little annoying for me because I have to fight it from jumping off the base when I use the tamper.

      You can just buy food processor attachment , it would make this video looks over compacting stuff, it is just shoving you almonds and leave it and every minute or or so push the almonds for the edges, and 5-6 minutes and it would be completely the same quality as this one.

    Can you over-blend?? My almond butter wasn't as liquid as yours so I kept blending and it started coming out of the bottom! I didn't realize this until it was quite the mess. It was all over my landing pad and took forever to clean the bottom as so much got stuck between the black piece and underside of the bottom of the container. Praise God I didn't give up and got it clean (I know you're not supposed to take that piece apart, and I didn't), but also praise God for Vitamix customer service! She suggested next time to do 3 cups instead of 4 (I have a 48 oz container and Vitamix previously told me min 2 cups, max 4 cups). I did everything else exactly as you guys shared in your video. It never overheated either. And very strange, but it got more liquid after sitting a little while. What did I do?! 😆 I just read through several comments, and it sounds like it still got too hot and melted the seal?? I want to keep making almond butter and not be afraid of using my Vitamix! I read perhaps just running it for 1 minute at a time? How long do I wait in between minutes of blending? Love your channel - thank you!

    You say this is RAW and you baked the almonds! :-) Also slightly warm almonds grind Much Better than room temperature or cold. Also the Vitamix Scraper Accessory is Essential for Scraping out the nut butter without ruining other rubber or silicone scrapers which don't work well and get damaged. I CELEBRATE whomever designed that scraper because it saves a lot of frustration getting your nut butter out!!

    Messed two jars trying to do so with my Vitamix, gets hot then the seal shrink i think then when you put liquid it leaks through the bottom where the adapter is. Is there anything i can do to not mess my jars ok they send jars back but not really Eco friendly.

    Not sure what happened, but mine turned into a hot mess, literally. It never creamed. It smelled like partially cooked almond flour, and was very hot. Followed the recipe as stated. In looking at the almond packaging, they are not raw, they are slightly pasteurized. Could this be a factor? So bummed.

      Roasting helps emit oils which makes blending doable without adding oil

    Thank you for this!! I just made it in my Vitamix- and I totally thought it was going to overheat, but it turned out great! Just curious- I see so many other videos on UA-cam where people are making Almond Butter in a Vitamix in 1-2 minutes. Do you know how they're able to do this? It seems like their methods are the same- roasting the raw almonds, letting them cool beforehand, but my Vitamix definitely needed about 8-9 minutes of blend time on high. There was no way it would have been done in a minute or two. Have you ever been able to make the almond butter without blending so long?

      I have E310 and I made this in 1 minute tops. In fact even the method in this video is wrong. I prefer not to poke around with the tamper and quickly you’ll see the nuts will start to become creamy and create that vortex effect like you’re making a smoothie. And with that affect, you’ll have a nut butter in 1 to 2 minutes at max depending on how much nut you put. I tried it with 550 grams of cashews and it only took around 60 to 70 seconds. I’m talking about silky smooth, almost watery like nut butter, not chunky. I only used the tamper in the first few seconds and that was to clean the sides where nuts stuck. I didn’t push down in the center.
      If, however, you’re poking around with the tamper, you’re not giving it the chance to create the vortex effect. That way it’ll take longer.

      They add oil but don't always show that step. They cut the clip to make it seem shorter. This video is a more honest representation of the process.

    I've been using Vitamix for over 20 years. I got a lot of roasted almonds so I thought I would try. Never again. I thought I was going to ruin my machine and it turned out . . . not very good. I finished up as best I could with my cheap food processor. I also have to say that what you show in the Vitamix does not look the same as what you were spreading on the bread.

    Tried to make a small portion - only 300 grams. Did not work well. I followed all the other instructions. Apparently the low weight was not enough to push the almonds down to the knives although i used the plunger. After some 15 minutes I got a paste but quite grainy.
    By the way the Vitamix book tells you to add oil - it is not my intention to add extra calories to the already quite fatty butter.

    I made this on Sunday but my blender overheated. I have a 3300 model and got an error message. After googling it, I realized it was the failsafe. Sucks, but oh well. I think I may have been running it on too low of a speed, which made the motor work harder than it needed to. I should have ran it at a low speed for a few moments and then cranked it up to 10 for the rest of the time.

    I found blending at speed 6 was better but i used half the amount you used. I found if the speed was too high it would bounce off the blade. Conclusion speed depends on how much buts you use ;)

      It took me 2min. Tip, moister stops it blending together quickly. Make sure your almonds are dry

    This doesn’t work in my vita mix. I paid $700+ for it right from the company. VM0185 series. It makes 4 cups of dry roasted peanuts into butter perfectly. I toast my 4 cups of almonds, cool them, put into blender and blend on nut butter setting. It always throws an error code. I even use the tamper. It took over 30 minutes to make my almond nut butter. The machine kept throwing a code.

    Can you make almond butter in the small 8 ounce cups? I just got mine and it was an epic fail as there was no way to push the nuts around. I got finely ground nuts but not creamy enough for nut butter.

    I love that you don't get any insects in the almond butter unlike the store-bought stuff the FDA allows for a certain amount of insects per batch of peanut butter. This way you know you're not getting any extra protein that you don't want in there. 🤟

So that's rats, birds, snakes (including deadly taipans), and so on, depending where the cane field is. I live near a sugar mill in Queensland Australia, and I've seen the dead animals among the cane awaiting processing.

      @@LINY My last batch I did not refrigerate and they lasted several weeks, maybe between 1-2 months in fact. It wasn't super creamy though, thinking I didn't blend them long enough. I'm on my second batch tonight, will blend longer and try the refrigerator this time.

    I am starting to make homemade almond milk...and almond butter eventually. Can you tell me how
    to soak raw almonds (about one cup) and how much water and salt to use. Hope my 2011 Vitamin 5200 can do it, never failed me yet!

      I soak mine overnight. Then dump the soaking water and rinse the almond. After soaking, put the cup of nuts in the blender with the desired amount of water - I use 4 cups of water to one cup of nuts. You can vary the ratio of water to nuts to get the level of creaminess you want. Some people do 2 cups of water to one cup of nuts for a creamier consistency. Some people do 6:1 to make it more economical but I find that a little watery. 6:1 think skim milk, 4:1 think whole milk and 2:1 like half and half!

    I put 2 cups blanched Almonds in the Vita-mix and run it for more than ten minutes and I ended up with a dry paste. I even added 1 table spoon of Avocado oil and still the same. What am doing wrong?

    We figured out the big difference between homemade and store-bought (often creamier). Both are 100% almonds. But only one is 100% *of* the almonds.

      Well, they all claim to have the same power motor but I've noticed unfortunately that some of the cheaper ones or the refurbished ones can work a little different. Couple of them were sent back as they sounded weird and one had issue. They should be perfect as my first one was Reconditioned and I still use it and it's works perfect but two other ones were not. Hopefully you'll get a good one. ;-)) OF course if there happens to be an issue they should replace it for you at no charge but it is just an inconvenience. I still swear by this blender. It's great.
