    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    Thanks for the video. Superficially, as long as the Oxygen in the bag is removed, yea, that is good. However, it is comforting to know that an oxygen absorber has room to spare in case you use a larger bag or I suppose open it briefly and reseal.

      Exactly! And equally or maybe more important, the long term issue is permeability - oxygen is going to keep going through the bag, slowly, forever. The better the bag the slower it happens. (That's the big plus with jars - not permeable - but on the downside they tend to be clear) Of course if you have oxygen absorbers in the bags they should keep absorbing any oxygen that comes through over time.

    First THANKS for all of the great info. Learning to do this has been interesting...
    So I have a question. What thickness should I be looking for in mylar bags? I've searched and get so many conflicting comments 5 mil, 7 mil... Can you shed some light on this please?

      Great question! I'll try my best. (If this isn't enough let me know)
      Two main issues I can think of:
      1) As I understand it, in general (everything else being equal), the thicker the bag the lower the oxygen transmission rate (OTR) ". . . divide by the gauge (in mil) in order to approximate OTR at a different thickness." (See the first chart here) www.polyprint.com/understanding-film-properties/flexographic-otr/
      I've seen one article saying that the OTR curve is even steeper than the linear nature of divide by the mil thickness, meaning that 2 mil thickness is more than twice as resistant to oxygen transmission compared to1 mil, that 3 mil is more than 3 time as resistant, etc.
      2) The other part is the mechanical strength of the bag to resist punctures - again, thicker is better. With all of this you also have to consider cost vs longevity. My bags my outlive me.
      Along with the other things I'm not, I'm also not a packaging scientist or engineer! I hope I'm reading the papers correctly. (I used to deal with packaging, but it was mostly corrugate:)

      It looks reasonable to go big with the 7mil... however, I found so far that the 7 is harder to heat seal. If I don't thriple heat I might not get a good seal. The 5's don't have that problem. I'm hopeful my fd'ing will out last me... My kids and grandkids will be well prepared if/when they need it. Thanks for getting back to me. These are by far the most informative videos I've found.       @@tilghmansmith5705 I don't know what sealer you have, but if your sealer is not easily sealing 7 mil bags, maybe the sealer is the issue. A number of people reported receiving sealers the did not function properly. (Including my sister' sealer)
