    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    Can you start a new batch when your freeze dryer still has ice build up from the last batch? Also my last batch the top and bottom trays froze in place and ruined my batch. Love your channel, you are so informative and have helped me so much. Thankful from Montana

      Yes, you can start a new batch without defrosting - under some conditions.
      With very low moisture foods you can do batch after batch without defrosting; marshmallows and candy come to mind. With most foods it's not the best way to go.

      All freeze dryers have a limit as to how much ice the cold trap can hold. (The inside wall of the chamber is being used as the cold trap) If that limit is exceeded the ice will get too close to the heated surfaces (rack) and re-sublimate, stalling or slowing down the freeze drying. The cold trap limit for the medium is somewhere in the 8 to 10lb range. (maybe a bit more if everything is perfect) Example: Five trays of broth could definitely overload the cold trap.
      When we are loading our machines, what we consider is the water load of the food, not just the total weight of the food. Ten pounds of broth is almost 10 lbs of water whereas 10lbs of cheese probably is only a couple pounds of water. I don't recommend water loads over 8 pounds for the medium freeze dryer; with an absolute max of 8 lbs. I did do 11 lbs of water load once and I consider it a bad plan and a mistake and I have avoided doing that again.
      Learn the ice load limit of your machine and try not to exceed it and you should be fine. This is why I do 10 lbs _maximum_ in almost all my batches, I can maximize the loads without overloading the ice.

    Hi, I have a cafe and we also roast our own beans, so, when I received my freeze dryer, I made espresso and freeze dried it- it was great, not as bitter as normal instant coffee. We just added I heaped teaspoon to a cup of boiling water, and had a lovely long black :)

      Our #1 son works roasting coffee, so we have a good supply of wonderful, fresh roasted coffee. So far I haven't freeze dried any coffee we've brewed. It's just haven't though it would be worth it for us.
      I've told people many times that I don't freeze dry coffee and why. It takes a lot of time and power for what I feel is a small amount of end product. But, as I said, I haven't tried freeze drying my own brewed coffee - I guess I'm going to have to try it! I'll just start with making the strongest coffee I can make. (I'll have to enlist the help of #1 son:)
      Commercially made freeze dried coffee isn't made from normally brewed coffee, they "brew" it as a thick coffee sludge.

    I have freeze dried brewed coffee and it tasted the same as fresh when I added hot water, but it was a waste of time and power for such the little amount I got. Brewed espresso might do good. thanks for sharing

      🤣 I've told people many times that I don't freeze dry coffee and why. I agree with you 100% "a waste of time and power" for small amounts.
      Commercially made freeze dried coffee isn't made from normally brewed coffee, they "brew" it as a thick coffee sludge.
      As I show in the video I mentioned in this video, we just buy freeze dried coffee if we want freeze dried coffee!

      true but if you never try something you never know. I have had a lot of failures in the FD. but a lot of successes as well. I do think I will try espresso sometime and waste some more money. just cus. plus I am always looking for a filler because seems I can never fill all the trays. Anyhow, thanks for response and the videos and keep them coming.@@SchoolReports

As a fill in item, coffee (or really, lots of things that otherwise might not make sense) could be a great thing to have on hand in the freezer, prefrozen in small pucks, cubes, or blocks. I'll have to see what items might make sense for me to keep on hand and ready to fill those spaces. Thanks!

      There are two scales we use all the time. The red one in this video is this one: Etekcity Kitchen Scale11lb/5kg amzn.to/3K3ajhY I really like that it goes to 1/10s of a gram increments for bagging (I use it mostly for bagging), but for weight the whole tray it seems a bit too sensitive. The slightest breeze on a tray sized item will change the weight by grams.
      The silver one in most videos is this one. Escali Primo Kitchen Scale amzn.to/3r8VqRe It's almost 12 years old and the first 6 years of life it's were spent in our kitchen. When we started using it for freeze drying all the time, we replaced it with another one of the same model, except blue. We've been very happy with them. I think because of it's accuracy, durability, (at least for us), and price, I would still recommend it.
      I'm happy to say that I've finally got an Amazon store link. (I just started setting it up - I hope it works) Now I can have one place to update when links change, instead of having to go to 400+ video descriptions to change product links! I show the scales we've been using.

      I don't know if these are the best scales for the job (probably not:), but it's what we've been using for years and they've worked for us, so we never looked into buying others. Maybe people could tell us which scales they use and why.
