    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    Great content as usual.
    As a side note, I would highly recommend checking out a vacuum chamber sealer for rehydrating foods. It would work way better than using the food saver. I got an avid armor recently to replace my food saver for sealing meat in bulk, and was extremely surprised at how well it works rehydrating freeze dried food. Things like bulk ground burger are essentially immediately rehydrated. Having the bag surround the food and liquid as the pressure is let back in is like a magic bullet.

      A higher vacuum would certainly rehydrate faster. FoodSavers don't vacuum very much. (3/4 ish?) (I find it interesting that a very low pressure is called a high vacuum) Chamber vacuums sound interesting, but I pretty much don't even use the FoodSaver. But you never know, maybe someday. (I guess I could just try the vacuum chamber I already have - the freeze dryer:)🤔

    thank you for bringing this up for our education! My husband says we will probably not cook ours first, as he prefers his cooked to medium-rare, and it would be hard to get that with cooked, freeze-dried, then cooked again steak. So, raw it is.

      I find that knowing the weight has made the minor effort of recording it to be well worth it for the times I do want to use it. I don't use it to measure out the water most of the time, but If nothing else, I have a better understanding of how much food I actually have on hand.

    Love the organization. My totes are a pot luck. I am going to do an experiment. I am going to freeze dry some eyed out potatoes and see if they will rehydrate and grow. Cut them in the pieces I would plant. Freeze dry dirt and all. I have plenty of extra seed potatoes every year.

      What a fun experiment! I know that seeds can be freeze dried and still germinate; I'll be more surprised if the potatoes work, but that would be great.

      Just a note for your planting success…
      There is NO BETTER WAY to get LESS of a potato harvest than to CUT UP each potato into chunks with eyes. The more eyes you have, the more plants grow. The more plants grow, the more potatoes you harvest.
      Potatoes, like so many other plants, LOVE growing crowded with their friends.
      PLANT WHOLE POTATOES, not little chunks. And try the Ruth Stout Method.
      Ruth Stout was a BRILLIANT and LAZY farmer. She planted her potatoes ATOP some nicely composted hay (not straw)and then covered them with a good layer of hay.
      No digging.
      No dirty potatoes.
      No worrying about clay and over crowding because they just push each other out of the way.
      We own a small, organic, regenerative, no-till, no-kill farm and I’ve been growing potatoes like this FOR MANY YEARS now. It’s so easy. You simply toss the whole potatoes down about one be every 8” square or 12” square and top with 8-12” of hay.
      The end.
      They BARELY need water unless it is very hot and dry. They grow and grow. When they flower, you can start harvesting “New Potatoes” or let the plants start to die back and collect full-grown tubers.
      All you do to harvest is lift the clump of hay and the potatoes are ALL VISIBLE. No digging. Just grab them. They’re not even dirty.
      Let the sit there until next year and that forms an even more rich, composted hay medium for the roots to develop and grow. Each year, without crop rotation, the soil gets better.
      SO EASY!!! ❤️

      We keep inventory tracking super simple by not "organizing" it! 😁
      There is no "organization" of our inventory on our racks of freeze dried food anymore. There used to be - it was too much work. When you first start it's easy to just have a bin for vegetable, one for fruit, one for meats, etc. When you start using and replacing items it can start to get messy. 😁Now we just put the bags into bins and track the locations in a data base. It's like a small, super simple, warehouse management system. (We both spent a lot of years in food related manufacturing) We do use the printed hard copy for the day to day movements of bags in and out.
      We are using OpenOffice database to track our bags of food, and of course, we can sort by food, date, or location. Once the quantities and varieties get large enough, tracking is way simpler than organizing. At least for me.

    I love these videos there is some really great info thanks for sharing , we have a little raw meat ( FD ) from a few years back so should test it as well . we also have some raw bacon , no fat ....... I like the idea of the containers to rehydrate thankyou for that :)

    Have you tried freeze drying marinated meat? I wonder if that would make the raw steak more tender when you cook it. I enjoyed this video, as always, and don't mind that you had done steak videos prior. It's like watching the same food being tested at various points of time to see how well it is storing. I was pretty happy when I saw you had a new post and I'm not the least disappointed.

      I think the only marinated meat I've tried was only "marinated" for flavor not for tenderizing purposes. I'll have to look at that.

    My vacmaster vacuum sealer has a marinate function which sucks and releases on its own after a few minutes and repeats it for a time period. I never really used that function much before, but I may use it now that I have watched your video. Tri-tip is not a particularly tender cut of meat to start with, neither is sirloin. You fried your steak, I would be interested to see how the meat turns out if it is broiled instead.

      😁 If I had remembered that I'd made earlier videos rehydrating some of the Tri-tip, I would have watched the to see what I'd done before and worked to improve on it. (They were 3 & 4 years ago) For those, I had rehydrated them trying different methods and then grilled them. The grilled ones were better than fried.

      Yes! All I'm missing (still) is a sous vide. 😁 I've tried sous vide cooking, grilling and then freeze drying. (Pork, not beef) I'd forgotten about that trial.
      I'll have to try that by doing the sous vide cooking and then freeze drying _before_ grilling.

      @@SchoolReports I didn't want to spend the money to get a large container and sous vide combo, so I just bought the machine. Mine has a spring loaded clamp that I clip on a large cooking pot. I use a wire cooling rack that just has bars without cross pieces to set over the pot and use spring clips to attach the bags to the cooling rack bars. Nothing fancy, but it works! Still trying to get the hand of cooking with it. Works wonderful for pasteurizing eggs!

      @@buckonono7996 When you say you "just bought the machine" is that the heater/pump thing that sits/hangs in a pot or container and heats the water and pumps it around?
