Great review! FYI the spinalis is the best part of the ribeye! From what I understand of SCA competitions, judges taste the spinalis and cut the eye for doneness! Great job on the grill marks! My grates are coming tomorrow, can't wait!

Those look a lot thicker than I thought they would be and I like the slotted spatula idea too. Flare up control is huge on something like a Weber kettle. I may have to try one of these out myself!
Forgive my ignorance, but you said "10 and 2" What does that mean and how long was each rotating and turning segment? Just got my Grill Grates and want to try your method. Looks delicious!!
Great question! Think 10 o’clock and 2 o’clock rotating the meat to coordinate with the hands on the clock, if that makes sense. That just creates cross hatch marks I usually make the rotation after about 30 seconds or so. Thanks for watching!

Also you can flip the grates over and use them as a hot plate.
