In Chinese the translation of kimchi is just the translation of “Korea” + “fermented veggies” and I’m pretty sure that is what started the whole miscommunication. And I do see arguments about because China has a longer history and Korea had been strongly influenced by Chinese culture in the past, they “stole the idea of kimchi from China”. However, this whole thing started by Koreans commenting on a Chinese cooking video saying that person is making Korean kimchi when that person was just making fermented veggies. Since China and Korea does exactly get along you can see that’s how everything started to get worse and both sides made stupid comments including “kimchi is Chinese”.
You can eat your kimchi right after making it. Keep it in the fridge and start eating it. It takes about 2 weeks to ferment fresh kimchi in the fridge but you can eat it anytime. If you like to ferment the kimchi quickly, keep the kimchi jar or container on the kitchen counter for 1 or 2 days until it tastes a little sour. Then put it into the fridge and eat it until it runs out.

last year at the start of the pandemic,i followed your traditional kimchi recipe from your video posted 7 yrs ago. At first, it was hard, but after 3 tries, i got the hang of it and would say,am now an expert of it. i started from not so much gochugaru to now spicy kimchi coz everytime i make a batch (i made it as part of my meal everyday), i develop resistance to spicy gochugaru. I live in the Philippines,and most kimchis here are made for Filipino taste,which are less spicy and it tastes bad as if they were not fermented( lacks ginger,onion, garlic flavors),so i dislike it. i only eat legit Korean kimchis. Delicious! I made Kimchi yesterday just by using local citrus juice black pepper, garlic onion chilly powder, salt, sugar fish sauce. I use sweet spicy chilli ketchup as substitute for rice flour! It is delicious!
Back in 2003/2004 I was only 18 yo, had no fam or friend in a foreign country (not South Korea), my Korean flatmate/s took me under their wings, they took care of me, I learned about kimchi and how they made it, it was really like a special day when all of them made kimchi, I also learned to like the taste, this was before Kpop/Kdrama booming worldwide, I remember that time when ppl asked and I said my flatmates are from South Korea only few ppl knew about the country. Everytime I eat kimchi now it reminds me of my kind Korean flatmates and the good memories, or I will eat kimchi whenever I miss them and the good memories 💗

Kimchi never goes bad if you refrigerate it. It will keep fermenting in the refrigerator. When kimchi ferments, it tastes sour, so as time passes, the kimchi will get more sour. Press down the top of the kimchi occasionally with a spoon so that the top part of kimchi is submerged in kimchi brine.
