Recipe:
For our banana cake you’ll need:
- 1 ½ cup flour
- 1 cup packed brown sugar
- ½ tsp baking powder
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tsp cinnamon
- 130g browned butter
- 2 large eggs
- 1 ½ cup overripe bananas, mashed and measured.
- ½ cup sour cream
- 1 tsp vanilla extract

1. Mix all the dry ingredients: flour, baking powder, baking soda, kosher salt, cinnamon.
2. Mash the bananas and mix with brown sugar, browned butter, 2 egg yolks beated, sour cream and vanilla extract.
3. Fold intro 2 egg whites beaten into soft peaks.

For the leche flan, you’ll need:
- 10 egg yolks
- 340ml evaporated milk
- 285ml sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 tsp lime zest
- 10 tablespoons granulated sugar
INSTRUCTIONS
1. Start by placing all the sugar in your baking pan. I’m using a 9x3. Run this on your stove, slowly melting all of the sugar and making sure to not let it go too far. The most important thing is that the sugar granules are completely dissolve. After that, it’s really your choice. The darker it is, the more bitter it will become. Take it off, right before it’s the color you want it to be. Let this cool completely.
2. Place the egg yolks in a bowl, and slowly beat them with a fork. During this whole process, if you want a perfect, meaning no lump leche flan, you have to beat this really slowly, to make sure that no bubbles form. Add in your milks, vanilla extra and zest. If you want something really smooth. Pass this through a strainer.
Put it together
1. Place your leche flan mix in the baking dish.
2. Top slowly with banana mix.
3. 160°C/320°F for about 45 minutes, in a bain marie, meaning in a tray filled with boiling water, reaching halfway up our cake pan.
4. Take out when cake reaches internal temp of 200F or a stick comes out clean.

I thought it’s going to be impossible because banana bread are usually dense (lack of better term) but when Ann said it’s fluffy I’m convinced and I’ll try it soon. Mexico has a cake super similar that’s really delicious called “choco flan”. 🤤
That's the classic one but their also a variety of different flavors that mexican people created/invented.I have watched bunch of them....like flan con pan de fresa or flan con pan de zanahoria. I really wanna try this one tho

I think you could probably steam it, if you haven't tried already. Just make sure you have a deep pot wide enough for the cake pan to fit inside and something for the cake pan to sit on/inside of so it is not directly on the heat
I tried this today and I really liked how Erwan presents it in a simple way. He is honest and direct. I just hope mine is a success

I think you should bake/steam first the leche flan for about 10mins just to harden the flan then after that you can put the batter mixture then bake it again. Thats what I always do when Im baking puto flan ☺️

You can substitute sour cream with plain yoghurt or buttermilk :)
you can make your own sour cream with just regular ap cream and vinegar/lemon juice and letting it sit for 30 mins to an hour, but yoghurt and buttermilk work too 😊
Is it only me or when you need something calm and knowledgeable. You play Erwan’s video in the background... I found myself doing this especially when I’m driving or just need a white noise while I contemplate my life. Hehe. So calming!
