I just found a jar of the Florida Citrus Chilau base flavor and the Gumbo Chilau base at a local Marshalls in the Food section. I had no idea what I was buying but the ingredients had Nola written on it. This is the closest to my grandmothers recipe for Shrimp Etoufee in terms of flavor but shortens the cooking time to about 30 min . As he said taste as you go along. I used Kielbasa and shrimp but added the Creole trinity of onions, bell peppers, and celery and diced carrots. No salt or pepper needed and taste as you go along . I used 1/4 cup of base to the heavy cream and seafood stock but ended up adding Another 1/4 cup of Chilau base to our family taste. Made my roux and simmered. Served over Carolina Gold rice with a side salad and baguette. I went back and bought 3 more bottles for gifts. Tried to purchase the sampler on your website but had problems . I see smaller jars on Amazon. You need to get your Flavor bases on the shelves of Whole-foods, or Wegmans up north. It would fly off the shelves.

My friend this looks great....but I'm just wondering why you didn't use chicken stock or shrimp broth as the liquid. And the heavy cream is an interesting addition
I believe Amazon ships international but happy to give some tips on amping up the flavor without our base. I suggest a Puré of garlic, Chile pepper, onion and a little tomato paste to start.
There are chile peppers in the base but it mellows out in the recipe. It’s not really spicy at all and you can reduce the ratio of base used to 1/4 cup for completely no heat. There is no real substitute for the base other than more dry seasonings to your preference.
Omg this looks amazing! I’ve been so intimidated by etoufee but now I’m absolutely going to try it! Thank you so much!! And the tortellini is an excellent choice that I wouldn’t have thought of on my own. I’m straight Southern so I go straight to rice every time! 😂❤❤❤

The base ingredient is our Chilau Stew Base which is packed with concentrated flavor and seasonings such garlic, celery, chile pepper blend and cayenne. On the shrimp I used our Original seasoning which is a dry version of our base which can be used as an all purpose seasoning. Yes, I have used cream of mushroom before and it adds excellent flavor. A slightly different flavor but still very good. Cream of... Soups are great mixers with Chilau Steew Bases.

It’s optional and the recipe can be adjusted to your preference. For me it adds the richness and smooth texture I like.
I was taught “fond = flavor”; but these no fond in a non-stick pan?
Check out some of our other videos. I also use a Dutch oven for many recipes where the fond develops.

Is this all cooked on medium high heat?
For the most part, once the sauce was formed and the sausage/shrimp were added back I reduced it to medium low.
