New Orleans Style Shrimp, Chicken and Sausage Gumbo Recipe

- New Orleans Style Shrimp Sausage and Chicken Gumbo #Plated #Gumbo Recipe
1 cup all-purpose flour
2 small young chickens
1 cup yellow onion
1 small onion for chicken broth
1 green bell pepper
1 cup celery chopped
3 cloves garlic
6 cups chicken broth
4 bay leaves
1 tablespoon Cajun seasoning
Kosher salt to taste
Black pepper to taste
6 ounces fresh or frozen okra sliced 1/2 inch thick
3/4 cup vegetable oil
2 pounds andouille sausage sliced 1/2 inch thick
1 1/2 raw shrimp peeled and deveined
8 scallions sliced
1 tsp thyme
1 tsp cayenne pepper
1/2 tsp garlic powder
2 tsp gumbo filet
1 tsp paprika
1 ounce dried shrimp (optional)
Directions
Add chickens to stock pot and cover with water, season with 1 small onion, salt, and 3 cloves of garlic.
Bring to a boil and then lower the fire to low. Simmer for 2 hours.
Set aside to cool....once cooled debone the chickens and keep the broth and the meat only.
To make the rue:
Preheat the Dutch oven or a heavy pot and add 3/4 cup of oil then add 1 cup of flour gradually and stir continuously (with a wooden spoon you must continue to stir from start to finish) the heat should be on med-low and add in flour until the rue is a dark chocolate color and a thick consistently.
Add pre-cut bell peppers, onions and celery to the rue and stir until the onions are translucent. Gradually Add 6 cups of your chicken broth to the mix.
Add the seasonings
Sauté sausages, chicken and okra and dried shrimp
Add everything to the pot and give it a good stir.
Let the pot come to a slow rumble and cover for about 30 minutes
After 30 minutes add the shrimp
Add 1 tsp gumbo filet to pot.
Turn on low and simmer for at least one hour.

Another lifetime ago, I found myself stuck in New Orleans. Had to earn money to get back home. Got a job in a mom and pop eatery.
I went to cooking school and thought I knew enough, but I was humbly wrong. I ended up staying for 2 yrs and I loved every bit of the food and culture.
I'll eat me some gumbo.

The roux is SO important! I made it perfectly tonight and I couldn’t be prouder in a culinary sense.
My Mom (RIP) was a Creole Chef from "Nawlins." The way you cooked your gumbo was almost to the letter the way she (and I) cooked hers. The only difference is that she added seafood stock to the chicken broth. I also add crawfish tails when I'm showing off my culinary skills for family and friends in Baton Rouge. Thank you for keeping your gumbo authentic. I've seen people put ham, turkey necks and other (IMO) non-traditional meats in their creations and call it gumbo. The tradition and culture of gumbo is important to me and you uphold both to the letter. I am now a subscriber.

well wait a minute girl, did you not trip when ya see him drop the freeze dried Koren shrimps in there lol !!! Question when you make the seafood gumbo broth do you boil shrimp/crawfish/crab shells etc. or what you do to make the broth other than chicken broth for the seafood gumbo?

When home made chicken broth is involved you know it's gonna be good.
For those that aren't big on boiled okra...a New Orleans trick my Grandmother taught me is to stir in fried okra right before you serve the gumbo.

I'm from Texas and that's how I cook mine too. Instead of the dried shrimp I put in seafood stock but its basically the same thing and I add tomatoes. Not many ppl know the okra secret either so that was awesome to see. Great looking gumbo

This looks like my late stepfather's gumbo that he used to serve at our family's restaurant when I was a kid, except he also put crab claws in his. I sometimes helped with pulling the meat off the chicken, but I was too young to remember the recipe. Thanks for sharing this. I don't like okra any other way, because of the texture, but it tastes great in gumbo for some reason.

Hey, not bad. I see a lot of people trying to make "gumbo" on UA-cam but this is totally legit. No tomatoes, you fried off all the slime from the okra, you let it cook for hours, you nailed it, brotha. One of the very few gumbo recipes that are actually legitimate online. Wonderful.

Roux is much easier to make in an oven instead of a stove top. I like crab in my gumbo. I also like it to sit overnight after cooking to let all the flavors mingle. "I Will Work For Gumbo!"

I grew up in La near Mamou and I cook exactly this man very lucky to have the cajun parents I had. I live in Cali for over 20 years and still cook as I did back home some things never changed. Thank you for the memories in the kitchen. This looks like a million bucks to me but better.

that is one of the better gumbo videos I have seen with that kind of result .....beauty
If you make this, if you don’t already know, make sure that your chicken stock is WARM - not cold! It’ll cause your roux to separate and clump. A lot of people say it ruins it and to start over but the first time I made it, i didn’t know and it happened to me but I just turned the heat up to medium high to heat up everything and I used my whisk between both hands and “hand blended” it to break apart the roux until it was smooth and blended and it still turned out good! So if you want to avoid doing that, make sure your stock is WARM ♥️

ok contrary to what i was taught. I was taught hot rue cold stock to prevent lumps.
How do you warm it? Microwave or stove?
@@andrewplaisance8416 you could do either to warm the stock. It probably doesn’t matter as long as it’s warm :)
@@johnbalogna803 I was too, but mayb that's if u need to thicken a lil more, u add your flour or cornstarch to cold stock, then add to hot roux

Yes sir now that's a gumbo I like ,nice and juicy with okra , and you can use invitations lobster in it , like I used , serve over white rice , freeze the left over for another day , most time it taste much better after you freeze it , a great meal for dinner on a cold night , great video , you explained it well, great job.

Been trying to find the Gumbo my mother would cook on Thanksgiving and Christmas. She would develop a very dark roux. It is a pleasure seeing an authentic filet gumbo! Even more of a pleasure eating filet Gumbo!

You make it look so easy. Growing up, gumbo was a 4 person, half day ordeal!!! But well worth it….. the rue stirring, the shelling, deveining, “go buy more file”, deboning, slice, measuring, chop, pour, sprinkle, stir, etc!!!! But again, well worth it.
