I had a lot of debate with people who say beekeeping is the same animal abuse as meat eating, even if I explain that I don't steal all the honey only the exess... my bees overwinter on their own honey, I only feed them with sugar syrup when nessesary...
Made this for my granddad's birthday, and everyone was delighted. I tried to make it from locally (ish) produced ingredients (central Europe), thus the following altercations: Homemade Golden Syrup instead of maple syrup, Hazelnuts instead of almonds, Sunflower instead of Coconut, and lemons instead of oranges (purely because of taste preference). I also skipped the simmering the apples in the juice because of time pressure, and they came out just right, with a little bite to them, but still soft enough to go on a pie. And just for the sake of adding an extra bit of creaminess my culture requires in birthday cakes, I added some lemon custard (lemon juice and zest, oatmilk, golden syrup and corn starch) on the base and arranged the apples in top of it. Thanks for that beautiful recipe!

+Aisling Walsh We use pretty heavy duty industrial equipment that we rob our of our production kitchen. I wouldn't advise buying that, haha. I guess whichever one is in between the cheapest and the most expensive ones. The motors always burn out on the cheap ones. We're pretty clueless as we only really use the ones from our shop.
we have a nutribullet its around 120 euro. I haven't come across a recipe I couldn't make with it. the motor is decent for the price. my friend has a nutri ninja and she struggles to make but butters with that. hth 😊
I've heard nutribullets are the business! If it's not broken don't fix it. You just might not be able to get the crumbly textures like a food processor would give you if you ever had to. You can get close to it by pulsing your mixture though.
I'm happy to see vegan recipes with honey in them. I truly do not understand what a vegan's objection to honey would be. Nothing was caged, killed, or abused. Local honey is beneficial for those with allergies. If people want to say I'm not vegan because I eat it, so let them! You guys make great recipes here, keep up the great work!
I wondered the same thing so I did a little research. Local beekeepers are probably more ethical than the big companies who can be really cruel to their bees. Some vegans, like myself, are avoiding animal products and processed food for health benefits not animal rights but that's not a bad reason either!
It's not a vegan recipe. Honey is not vegan. I'm not saying this as a moral criticism, I am saying this to show respect to language and to definitions. If you want to buy honey to support local beekeepers then go ahead, I don't have a moral complaint about that. But please use the correct nomenclature.
today a lot of beekeepers take most of the honey from the bees & feed them high fructose corn syrup... and then we wonder why the bees are dying off, there are other reasons obviously... but seriously? taking all of their honey (which is THEIR food & insulation for the winter) and feeding them corn syrup... not hard to guess why people are against it.

rice syrup is closer to consistency of honey and tastes almost the same - and is cheaper!
