I have a GTX 970 in my Media/Office PC and it is still a surprisingly capable card even with the 3.5+0.5 GB of vRAM mess. Pairing the GTX 970 now with a Ryzen 3 1300X and 8GB of 3200MHz DDR4 even a game like Hogwarts Legacy sticks around the 60FPS mark. Of course there's a lot of Low in the settings and use of a balanced FSR preset but it runs and runs well. If this was the only PC I had I wouldn't feel hard done by.

The GTX 970 itself was replaced with a RX 580 8GB 2048SP. My gaming PC now has a 5600X, 32GB of RAM, paired with a RTX 3060 12GB.
I loved my FBM X2 case As a first computer case. I’ve definitely updated since then but this little guy served me well for years. Airflow was sketchy but take the front panel off, buy a cheap molecule fan controller and some cheap cooler master fans and it was a great little machine. Definitely enjoying these videos

Mainly for custom pro office set ups for editing or for fast paced offices. I use the A520 and it's actually in the pro line up for the am4 platform. it supports up to 4800mhz DDR4. it's no slouch. it just has 1 Nvme and only 2 Ram slots. most of the time these youtubers are only putting 2 DIMMs anyway so really there's no cause for B550 unless it's for looks and 8pin cpu. that's all. the Mother board is actually higher end then I expected it to be. I'll be able to go Ryzen 5 5900X in the future or 5800X3d. I'm going to be on AM4 for a long time@@iamspencerx

Jedi Survivor actually ran pretty well for me at release, I doubt I was getting 60 fps all the time especially on Koboh but it was never unplayable. And it looked like it was running pretty well for you too, if you had a Ryzen 7 CPU and either a 1660 Super or a 1070 you probably could have met your goal.
The reason he didnt get 60fps in jedi survivor mainly beacuse of the motherboard, on average the utilization is around 50% meaning there some sort of driver issue

Because FSR balanced is on at 1080p. He's CPU limited too. I feel like a Ryzen 5 3600 on an A320 would've opened up the budget to an RX 5700 XT and gotten 60 fps
Honestly Matt's pc could run jedi survivor on lower setting and tbh I do use 720p which will run even medium at 60. I say maybe for next one make it so certain ones have to run on certain resolutions

The A520, as far as I know, supports all Ryzens except 1st Gen, so your 2600 should be fine.
