This song is SO GOOD, god. About the question, it depends. Some of these boss battle songs are voiced, and some are instrumental in the actual game. This one (if I remember correctly) is just instrumental on the 1st phase of the boss, and it changes in the 2nd. But some others are voiced all the way through.

Despite how scary her transformation is, Behemonth is just like a dorky big sister who will do anything to protect her “family”. It makes sense that she’s not really super aggressive.
Her boss fight is really aggressive though. Difficult but fun without bullshit mechanics like mother whale or mirror container, it really feels like you're a matador taming a raging beast - and the music adds so much flavor to it.

The version in Cosmograph's channel is the best, its almost like a "boss theme", it has two versions, the normal version by Nien and the remix by Cosmo. It kinda is the theme of one of the main characters now, but most people don't even know it yet.
For this Boss, the first phase plays the instrumental version of the song but modified. They added more riffs and guitar to enhance the song so you enjoy it just as much without the vocals, leaving no gaps. In the 2nd phase the song plays with the lyrics (2nd phase starts at 2:37 in your video) "Like a wrecking storm, oh yeah"

in-game usually we have full lyrics version playing for boss fights. the only exception is Anomaly Boss battle with Indivillia, originally there're 2 music for each phase, one is Headless Angel (which is licensed music, you can't react sadly) and final phase is Absolute Maker by Cosmograph because she's the boss for 1,5th Anniversary event. for now, what we have to fight her in Anomaly Encounter mode is only Absolute Maker, phase one is the instrumental ver. and the final is full lyrics ver.
The song opens with a dialed down instrumental 20-30sec part before transforming into what you listened to. As this is a specific boss battle theme, it's not like the chapter battle themes that have 3-4 different versions at times. Bit ironic that's the art they used for the release, but the "quiet" start is when Behemoth is in her giant bulldozer form. Then as she transforms into a giant charging raging bull and headbutts the screen, the song fully engages for the remainder of the fight. It honestly all feels very kinetic, which may be a reason people seemed to like this fight. Honestly, with the whole boulder slinging and lightning storm stuff going on with that track, I'm looking forward to the next time this fight is featured in raids.
For me this ost really 'hits' damn good like how the boss is crashing us in the second phase of the fight. And i like how Cosmograph really throwing random genre ost banger like how behemoth constantly throwing the boulder.
Requesting Dirty Backyard as usual! Also, I liked the informative popups. Sometimes I'm vaguely aware of what something music-related is but having a definition on screen while it's relevant is very helpful.

Regarding the voice tone not being "angry enough", it might be intentional, considering the boss' personality. She gives an impression of a golden retriever that is taught to fight There's more thrill of battle and excitement about new last-ditch abilities than strong malice
Also Nien's "Outbreak" is kinda overlooked with Wrecking Storm and Ready to Go stealing the show, but it is imo one of the best Nien's solo works in Nikke overall
