    Im not quite sure how I arrived here being someone from an ultra low economic and social status.I notice myself increasingly interested in trying the better side of the world. I notice the most exquisite stuff to experience either has everything to do with quality. I shall keep dreaming.

      well Jamie Oliver said that the poorest countries have the best food in the world. I would make here an exception for Africa.
      Think about a business revolving around the basic needs and/or sins of humans and you will live quite well: food, drinks, etc.

    Thank you for this video. I love these fish. Sturgeons are very vulnarable fish. But these fish are famous their meat and especially caviar. Natural stocks collapsed unfortunaltely. Now, if humanity wants to eat this valuable food in near future, more sturgeon species culture farms must be construct, hereafter.

    Don't feel bad. I have tasted virtually all from Iranian Beluga to Kelp. Once salt is introduced the eggs lose their original taste. Fresh Caviar tastes exactly of the fish it comes from except the Kelp / Seaweed. Caviar served at exclusive restaurants is only a hype. Those who eat them know not what are they eating, especially, when they are drinking Vodka (Russians) or Champagne, both dulling the Taste buds. The only Real way is to eat it Raw / unsalted. When the Roe is broken, it releases the aroma and the taste of the fish and that is exquisite. BTW, Sturgeon is a very special fish. Its flesh ranges from dark pink to pure white and tastes like no other, especially, when eaten Raw, yep, Raw.

      Hi JoAnn, sorry for late answer. The sturgeon meat is a delicacy if you know how to prepare it. Nothing goes to waste in our farm and all the parts from the sturgeons are being used and sold, the filéts primary to restaurants.

    If it is eaten with a mother of pearl spoon, to avoid metallic taste, why is it packed in metal tins? Why is salt used? Isn't the brininess from the water enough? I am about to have my first taste of the black gold.

      Salt is used to make the caviar taste a lot tastier. And ups the shelf life.

      Hi Urban, sorry for late answer - hope your first tasting of black gold was a delicious experience! To answer your question about the metal tins, they are prepared in a way that they do not give off any metallic taste. Regarding the answer given by "Fire Dragon Slayer" about the salt, he´s perfectly right :)

      The tins are layered with a protective sheet of some sort of plastic. Also depending where the farms are, they add different amount of salt. The roes from caspian sea are usually saltier by nature due to the salt content of the Caspian sea. Farms use same water. Also salt adds shelf life as someone else mentioned.

    I personally treat animals with trembling and I always feel sorry for watching them suffer, in this case these fish are in constant stress and anguish, how can one keep a living being in confined spaces? I understand that people would like to drink milk, have butter and cheese, eat caviar, I agree even with the fact that we are exploiting animals, alas our world is so created, but for God's sake do not torment them, give them more space and they will be happy and their products will be more favorable and will not contain adrenaline and cortisol, which develop in humans oncology and heart diseases.

      Christopher this company doesn't. They massage the eggs out and spare the fish. As far as I know, they are the only ones who spare the sturgeon.

      Michelle Devon no they cut open the stomach and take the hole sack of caviar out of mother witch causes her death.its not like what you think all fishes except salmon die to this process because the salmon eggs are huge so it can squeeze out easily such as koi fish. But in this video they already killed the fish in order to get eggs out.

      5eyed I apologize. I was incorrect. I was thinking of Vivace Sturgeon Farms in Germany who make no kill caviar. They sonogram the egg sac and then when it's ready, they induce labor. While the female is in labor, they massage her belly every 15 minutes or so until the sac is birthed, usually in whole. Then they can rupture the sac and process the caviar. The female can then return to her building tank. This way a female can offer caviar about one every 2 years and doesn't have to die.       However, I do apologize for my error. I thought this company was the same one, and I was wrong. This company does kill the female for eggs.

      There is no barrier between the eggs and the innards, so, while it would technically be possible, the fish would probably be permanently injured and in pain as its organs would slosh around the big cavity left behind.

    It’s such A SHAME YOU KILL THE FISH! You invested YEARS to get it to the point it makes eggs & it gets only ONE CHANCE & BANG, IT’S DEAD. You should follow the lead of sustainable caviar producers who get a new batch EVERY YEAR for many years.....the bigger it gets the MORE eggs it produces. Seems the REALLY HUGE fish would deserve a tank all their own when they got REALLY BIG, because you’d be getting RICH off @ one @ year!!!

    Look at these rich bastards plates , 2 ritz crackers slice of cheese and some veggie and fish eggs for $400 ..... boy they got no idea how awesome Chick-fil-A is ....... poor souls don’t know what to do with their money 😂😂😂😂😂

    totally over rated....nothin' more than status quo...if you're into roe then stick with ikura or trout caviar and save your money.
