I think saying he saved an entire species is far-fetched. His efforts are admirable, and so is his aim, but I dont think an issue of extinction is simply solved by donation of eggs to their native habitat.

I think he's only using the stripping method for the Beluga but not the Ostera or Sveruga. Makes sense though, Beluga takes a long time to mature compared to the latter. LStripping eggs in that manner can yield damaged ones, but in return he can keep having the fish produce more and doesn't need to wait another 10+ years for beluga eggs.
That young sturgeon coming out so feisty is good evidence of their health. Sturgeon aren't even super feisty in the wild, though they'll put up a good fight on a line from what I've seen.
What you people don’t realize is how poorly these monsters are kept. The tanks are too small or too crowded for these fish and if you don’t believe me look at the fins and how deformed they are from swimming in circles for years.

Except this caviar comes from an Endangered Species, which except for this one farm is only available on the black market. Rarity justifies price, at least for people who enjoy the flavor.

But I do oysters on the half shell and a lobster for surf and turf. But if I'm spending a $900 a plate, it is not for Jenny Craig portions. I like real portions of food. If I want to starve, I'll get a job as a super model. To me, this is real food. If you've never had Beluga, try it just once. It is worth every penny. Be sur to take a picture with your iPhone. These chefs make real art!
Genghis Khan680 plastic spoons will work just fine since it will not react to the eggs unlike metsl. However, pearl spoons that are made specially for caviar is cheap and you can buy it from Amazon.
These fish are crazy fun to catch. The only downside is that they can get very dizzy when you are releasing them and if can get dangerous for them, so you need to be careful how you are handling them. Besides that, the fight is amazing
