    2.5- 3 lbs chicken bones (carcass, neck, feet)

    I thinly slice the chicken skins and render them down slowly in a cast iron skillet to make the best crunchy treats. Takes about a half hour on med-low heat, then up to med-high for the last few minutes to crunch them up - remove when they start to brown and get crispy (they will continue to dry/cook a bit after removing) and let drip dry in a sieve or on paper towels, add salt, pepper, and any other seasonings like garlic and cayenne/chile powder. 98% of the fat is removed and you're left with crunchy protein bits that are great toppings for sandwiches and salads, similar to bacon bits. You can also use the rendered chicken fat (schmaltz) for cooking things like eggs or potatoes.

    Gosh! That's what I call a wonderful caldo de Pollo. All the veggies are so colorful n the soup looks so delicious amen. Also Nelson I like the way you Dialogue with your wife.     My mother and grandmother would make this kind of chicken soup for us kids (and we had a big family) not in a pot but a caldron outside over a fire. This is food from heaven! ❤

    Let me tell you that for us is not only for winter but truly is when you crave something yummy and warm and good for when you are sick 😷 with flu or common cold but honestly we cook it all year around sometimes my wife goes to the farmers market and buy few live chickens and kill ‘em at home clean ‘em and make chicken soup or “caldo de gallina 🐓 Ayayay!!!😋

      @@VillaCocina Yep I can tell you guys that when I get sick with flu 🤧 and I feel like dying my wife makes a mean chicken caldo and she literally forces me to eat it hot and I don’t like hot stuff I always let my bowl to cool down cause I have a cat’s tongue 👅👀🤣😂🤣😂🤣I hope señor Nelson is not having the same issue 🤣 lol if is burning hot I don’t eat it until it’s just warm ha hahaha…Thanks for taking some of your busy time to reply to my dumb comments lol Merry Christmas!!!     I do love your recipes and notice you always do the extra step to make it better. I just wish I can afford every single ingredient. This would all cost me like $80 at the store I go to.

      No it’s not expensive to make at all tho.
      Farmers market for fresh veggies or Aldi if u have one near for veggies at a great price.
      Need cabbage potatoes carrots celery chicken drumsticks for a simple delicious affordable Caldo spices what I have in hand Garlic Onion Cumin powders n that’s it. $25 tops 🤷🏻‍♀️

      Good question! You would have to do it in a pot ove low simmer for about 4 to 6 hours. Hope this helps!

    Yo your stock I never thought about, or was given direction to do so, brown the chicken bones.
    Did you add rice, or some kind of starch to your soup?

      Not the same at all. I've had Beyond Meat plenty - it's fine to eat, but anyone that thinks it would fool a meat eater is a fool in denial. Just make real vegetable stock and don't waste money on an expensive jar of chemicals, hype and trickery.
