Rachel , this the first time I’ve seen someone make Caldo de pollo the same way I learned from my mother. Browning the chicken pieces first before adding the water makes the Best Caldo. So many cooks just boil the chicken without this essential step. It just isn’t authentic without this step. I’m sitting watching this video wishing I had made some yesterday like I had planned because I wanted to have some after my medical procedure today. I wish I had made my Caldo for a faster recovery. ☺️ I can live on this soup as well as Caldo de Rez. I love them both but Pollo is my favorite. I knew when I started watching your videos that you were a wonderful cook. .. but especially today watching you make Caldo de pollo. You’re teaching the world our Hispanic heritage wonderful recipes we all grew up with. My friends and family always tell me I should do You Tube cooking videos but..., not all of us have what it takes to follow thru with their dreams. Bless you , wishing you the best!

Oh my soul! Thank you thank you for this! I have been living back in the states for a couple years now and lately I have really been missing the comforts I came to love in Hispanic communities. I was searching for true authentic recipes, found your video and tried this for the first time tonight. It turned out perfectly, to be honest it actually made me cry after the first bite I took, but in a good way. Thank for bringing me this comfort tonight. Hi Rachel, I'm on the last step of Mexican soup with rice. I normally cook my Spanish rice separately! I love your Mexican soup recipe; it is very easy. In addition, I enjoyed some tips and knowledge that were very helpful such as cutting the potatoes too big or too small or the potatoes will get mushy, using the end of the celery which gives the soup fantastic flavor, the foam on top of soup of the first boil which is called "Protein,' and lastly, simple steps process using only one pot!
Always learn from you. Watched more cooking shows from you than any TV cooking show. You are above them all. Always love to watch you taste test. I'm like dang you make that look tasty
