How to make a classic Kougelhopf - Gugelhupf

    This Gugelhupf recipe is a French one from the Alsace.
    This cake is made out of a simple yeast dough, but I found it one of the most critical cakes to make, so it is monist, fresh, crusty, light and full of flavor.
    Ingredients:
    500 g plain four
    80 g sugar
    8 g salt
    2 eggs
    20 g fresh yeast or 8 g instant yeast.
    150 g soaked raisins
    175 g warm milk
    175 g butter
    some almonds
    some sugar and cinnamon mix as topping.
    The dough is a French type yeast dough, a pate brioche. The soft butter is mixed into the dough after all other ingredients are well mixed together already.
    For this cake it is very important to let the dough enough time to rest.

    Well. Alsace was German and then French and then German. Some of them speak Schwäbisch. Therefore Alsace has its own very special temperament.

    Gugelhupf is a European wide known cake, with a very long tradition. I changed the text to make this more clear.
    The recipe I used is from a French Christmas baking book I bought some time ago in Strasbourg at the Marche Noel.

    This is NOT a french cake - originates from Austrian-Hungarian Empire. It reached other EU countries from that region.

      The origin of this kind of cake may not be France, but this recipe is from France, from the Alsace :-)

      He pronounced the name correctly . 😊 I always thought it is from Austria. Not worth to start another war. It tastes great! I am from Germany 😂
