you dont have to use spoon to layer it since you also put tons of ice, that alone will catch the blue tea preventing it from mixing with the lemonade while pouring it. regardless its a nice drink
Maybe it’s purple because the lemonade is more transparent than it is yellow. Thus not turning it green. It would probably be a really pretty green too if it turned that color tho.
It actually changes colour based on the pH of the liquid it's mixed with. Acidic liquids turn it purple (like lemon juice), while base liquids turn it into a deep red (like hibiscus). Pretty cool!
