Then, you combine the calcium lactate with water to make a calcium lactate bath. Next, by dipping the sodium alginate mixture into the calcium lactate mixture, calcium alginate is formed. For this, the gel like membrane grows inwards since the geling agent (sodium alginate) is on the inside of the sphere. This will make it eventually turn fully into a gel from the outside to the inside. On the reverse of this, there is reverse spherification. You combine the calcium lactate into the mixture you want to contain an edible gel membrane layer. Then, you combine the sodium alginate with water to make a sodium alginate bath. The gel like membrane grows towards the outside since the geling agent is on the outside of the sphere. These tend to usually last longer than normal spherification does. Also, if you want to actually do this, your liquid/drink to make into a sphere can’t be too acidic so a pH above 3.6 is ideal. For normal spherification, you need 0.5% of sodium alginate for the amount of juice/ edible liquid you want to use. For the bath, you need 1% of calcium lactate for the amount of water you have!!! Hopefully this helps anyone who’s curious!!
