I’m going behind the counter at a local family owned Japanese Ramen shop, Kakitagawa Hibari. This hole in the wall, through the corridor, would never know it even existed, hidden Japanese ramen shop is exactly why I love doing these videos. The shop was originally opened in Shizuoka and relocated to Ebisu at the start of 2021. The shop had a fairly quiet start but quickly picked up a reputation and these days more often than not has a line out the door. The shop uses a special blend of 5 unique kinds of miso paying careful attention to not add heat until just before combining it with the soup to preserve the miso’s flavor, a distinct saltiness paired perfectly with the sweetness from the pork back fat creating their signature bowl of ramen. The shop uses noodles from Kaikarou, a specialized Asakusa based noodle producer. The noodles itself are made from a blend of 2 types of flour and Tapioca to create its characteristic spring texture and sweetness, pairing perfectly with the shop’s strong and rich miso soup.

aAAAAAAAAAAAAAAAAAAAAAAAHHHH
Mr. Paolo, can u maybe do what a Japanese cab driver or small grocery store owner day in the life. It would be cool.
Great video as always I really enjoy this series and your videos can’t get enough!
Mr. Paolo, can u pls one for vegetarian/vegan ramen and halal ramen shop
Day in the life of a Japanese teacher please!
I don't think I'll ever get tired of this series. It's fascinating watching people do what they love and do it well, but the people themselves are also always interesting and keep me coming back.
Makes me hungry.
Likewise 👏
And great ideas of legit places to check out when you go to japan
agreed, can't wait for the next notification from Paolo
@@jeshil especially day in the life
Paolo getting the comedy chef to do random things was hilarious 😂
poor guy was peer pressured into not rejecting these random requests xD
The joke had me dying cause he was dead serious lol then the dancing made me love the guy lol no fear
i got the "dance for me monkey" from paulo, vibes
9:05
Can't believe you actually got him to dance for the camera lol
lol yeah, I wanna hang with that dude!
the guy's a comedian, probably trained with Yoshimoto Kogyo... he's very used to be performing.
lmao i just Choked on my chewing gum while seeing him dance
Dude's got more dance moves then my Grandma
He's quite a mover...I was impressed!!!
Little places like that really are neighbourhood gems. I think that, especially in big cities like Tokyo, visitors from overseas tend to miss out on these family-run places in favour of the more accessible-looking chain restaurants. (But they are really missing out!)
Thanks for showing this kind of authentic Japanese awesomeness, Paolo. 🍻
@@missplainjane3905 Yes even the chains have very good food. :D
@@missplainjane3905 you mean at the chain restaurants? Yeah, it’s not bad either. But these independent places have so much more character.
@@missplainjane3905 unfortunately some family run - traditional ones don't accept tourists, but I hope one day they'll be more open to visitors!
@@missplainjane3905 I personally not, but my friend who visited tokyo, wasn't allowed to enter some izakayas. They even had a "foreigners aren't allowed in" sign outside the entrance. My friend and her husband thought it was because of the language barrier, and despite them knowing very decent japanese, they weren't allowed in.
Of course they didn't have the same experience in every restaurant/bar but it sure left a bitter feeling
@@missplainjane3905 racism as well. I've heard cases of fluent speakers getting waved off before stepping a foot inside too. I hope things are better now
The quick cut from the comedian chef refusing to dance to the next frame of him dancing had me choking🤣
There is something incredibly beautiful about a simple ramen shop run by a husband and a wife alongside a young apprentice. Feel like stuff like this can't be seen in the west anymore (or at least not in my country).
where?
No one seems to take on apprentices like this anymore, and companies NDA recipes and don't want anyone to use them, especially to open what would be a competing business even if they aren't near eachother.
Western society and capitalism doesn't value honest work and small marvels like these places. It's always grow, grow, grow, and never satisfied until you're driving the best cars and vacationing in the best spots.
sounds like an anime
it's normal in asia that ramen shop manage by family members, and will continue on to their generations...an apprentice, is rarely happen...if so then the taste will be slightly different...
I turned 36 a few weeks ago, and seeing how the owner made a change around the same age makes me think I really should go through with a career change. Hope they continue to be successful!
The chef has it all.
A successful ramen shop, a job that he loves and a beautiful wife.
Congrats to him!
the dedication to produce such quality food.i'm amazed.
Thank you for watching!

The comedian chef has a realy upbeat personality XD
I had ramen there today for my last day in Japan, and it was delicious. The comedian is an amazing cook as well
Never seen anyone more dedicated to Ramen, I bet the food here absolutely slaps
Ramen will SLAP yo face! ^_^
I wonder if this is the standard for family owned shops?
im sure it slaps
Why did you steal someone's comment? Grow up and stop botting
lol cringe getting mad thinking comments are copyrighted. You need to grow up first, e-kid
I love the way customers express themselves. You can really feel their appreciation and love for the dish and the work needed to prepare it.
Japanese take their food seriously, many people are foodies looking for special dishes, like that guy who goes there for that one ane men dish when the shop is famous for miso ramen.
My man got the cleanest moved I’m dying 💀 I love his dance Fr
行った事がありますが本当に美味しかったです。
今までの味噌ラーメンとは違って不思議な美味しさですよ。お店も綺麗でスタッフさんも感じが良くて良かったです。また行ってたべたいです。ありがとうございます。🙇
I love these "behind the counter" videos, everyone's food looks so good 😋
Japan food's always looks good
me too
I still want to see a day in the life of a Japanese reporter/journalist. Japanese culture is so structured and so polite, I just can't imagine a Japanese journalist aggressively going after a story or chasing down a source.
I agree with you; I would love to see this as well. In the meantime, have you read the book “Tokyo Vice” or watched the HBO mini-series of the same title? I’m sure it’s exaggerated for dramatic purposes, but still very interesting.
@@courtneyehalchak that and also being shown in a third person (the OG source is a memoir of the journalist, so some details might not be accurate)
Me too...that would be amazing! I just recently watched The Journalist on Netflix (Japanese with subtitles)...it was such a good drama!
I ordered the sponsor box for a year for our office, and my team loves when it comes. It’s the real deal and it’s so much fun.
That has the be the cleanest restaurant ever . Nothing is out of place .
Haha the comedian guy was so funny!! Love the charisma lol
Yeah I've always said before, if you want really good food find the "hole in the wall" back alley ones. Chances are it'll be better than a fine dining resturant. Mainly because places like that typically pass recipes done generation to generation. Thus you have multiple generations of men/women constantly one upping or improving recipes their parents passed to them.
I love the quality of work of Japanese people.
We went today for lunch. 10/10. Beautiful and delicious. We tried the spicy and special ramens. Thanks Paolo.
A few things I liked about this:
- The owners and workers seems very intimate (i hope the right word) to each other that they do tell some banters about each other. IMO, signs of a great sync when the busy hour comes in.
- Various dishes are just super tasty just by looking on a screen, and when the customers also praise the dishes, you know its high quality.
- Very clean environment overall. Despite its rather small space, They somehow made it so that its very homey and cozy to eat inside.
- Staffs seems friendly to chat with, maybe while eating you get to chat with them if they have the leeway while cooking. (lol)
If i ever get the chance to get to Japan, I'd definitely try this place out!
I'm glad youtubers like you are documenting everyday life and shops
That's one of the most freshly made ramen broth I've ever seen and the staff are amazing. Love the comedian guy! lol And the presentation is gorgeous! Would definitely consider going here if I ever do visit Tokyo for ramen.
his most popular menu item is special miso ramen
his wife liked the miso ramen of the place where he trained at (she very rarely eats ramen before meeting him)
his original plan was to include said miso ramen even though it wasnt trendy
what a lovely food romance lol
This ramen shop is so inspiring to see! The owners and their comedian worker seem so focus and happy at their jobs.
It's my first time to hear someone say they like to do customer service, japan is really something in many way.
Ready………set……FESTIVAL MAN. I’m still laughing at this. Awesome video and man I’m craving ramen!
The behind the counter series is so interesting. It doesn't matter if you cover the same type of shops, just on different streets, I will definitely be watching them all! 💕
When Paolo posts a video, it makes me smile 🥰🙏
Paolo, I'm in culinary school 👨🏻🍳, so seeing ANYTHING about culinary Japan motivates me! 🥢🍽🥣🔪🇯🇵
i like the dude whos a comedian if i lived in japan i would want a friend like him
Behind the counter is 👌🏽 and day in the life
paolo has the best videos that perfectly display everything i always enjoy his different series!!
its amazing that when I started watching your channel, it was just really small but with awesome info and now it has grown so big!
Love that they were so happy 😍
The "Festival Man" got me. I didn't know what to expect
I love how we get to meet shop owners, their stories, their daily work life etc.
love the behind the counter series! thanks for uploading these videos :)
Certified Gold!!!!!
the chef employed is very cool!, it's rare to see that attitude in Japanese, loved it, I would definitely eat in that restaurant
It’s cool that they’re so young!
They're such an honest couple.
I could watch a new one of these every single day. It's so entertaning.
the host club tidbit was interesting. We used to have a hostess club here in Sydney that was actually a ramen store during the day. Same staff, same decor, but your only company was a lovely bowl of ramen. it makes a lot more sense now.
in sydney? what was the name of the ramen store?
@@TheXeeman it was Crescent hostess bar / ramen bar. closed down after 30-odd years with covid sadly.
Please do a behind the scenes of a Japanese Third Wave coffee shop/business. Some Japanese cafes are at the cutting edge of coffee culture
This was awesome ! That guy had to be the most outgoing Japanese I have ever seen
That was so cool to see him dance! Wow what great energy! I also like that idea of sharing the AirPods that’s cute ☺️
Gonna remember to put this on one of my places I want to visit and eat in Japan. It looks magnificent
I love your simplicity of your channel
Paolo Uploads i am Happy.

Thank you for sharing and a warm thank you to the owners for allowing us a glimpse into the business, many blessings from America 🌸
Fantastic episode! They seemed like such genuinely kind and fun people! They must have a lot of fun working together and it shows in the food.
You cant imagine how much I want to give it a taste to a proper Japanese ramen. Thank you for this videos bro!👌🏻
I love how these people are not professionals they’re good at what they do and they want to have as much fun as possible

I love these videos. I’m always shocked by how the customers explain why they eat at a place and how the food is. They are so eloquent and all I can say is , ”Food is good!” 😂
