    Japan Behind the Counter at a local Japanese restaurant in Tokyo called Bulldog with the most popular menu item, Menchi Katsu which is Japanese breaded and deep-fried ground meat patty but they also serve many other fried items. This is not a Japan Day in the Life the video, but it captures what happens behind the scenes of a local japanese restaurant setting up in the morning and getting ready for lunch. This Tokyo Restaurant, Bulldog, is a traditional Japanese Western influenced style restaurant that usually has customer lines almost longer than its history. Just a 3 minutes walk away from Oimachi Station, this shop was opened post war in 1949 in what was considered a black market area but evolved over time and now situated in this historic hidden backstreet alleyway known as Higashi Koji Shotengai amongst other bars and restaurants with a similar history. The owner. Suzuki san or as everyone refers to him Sensei which means Teacher in English is a second generation shop owner as it was passed down from his father. This is a half a day in his life a Japanese restaurant owner.

    I've worked with someone who is extremely similar to Sensei haha. An older man from the Balkans who works as a head chef for his own restaurant. He seems just as carefree and knowledgeable as Sensei and most of all ALWAYS gave me so much advice about all sorts of things in life, lol. It's nice to know that this kind of personality exists elsewhere in the world too.

    Incredible! I love that the owner takes care of the staff by feeding them and working to ensure they’re paid on time. I am so appreciative of those who take time to care where it matters, not where they feel good, but where it is right for the staff.

    This might be my favorite video you've ever done and I have seen many of them. Really enjoyed this. The chef was quite a character, but seeing real, normal restaurants like this is a lot of fun.     I was a bit shocked to see how messy the kitchen was - i am sure the food taste amazing, but the kitchen should be cleaned so the salat wasn’t leaning up against dirty wall tiles

      Yeah, that place was filthy and broken. Had that been in EU or US it would have been closed down long ago.
      And it sounds like a pretty busy place, so he should have the income to renovate it and maybe hire a cleaner that can come in after every shift.

    Seems surprisingly unclean for a Japanese restaurant but i would still give it a go. Still better than most of the shxtholes here in NYC. I think i would go for that fried meatloaf : ) That looks damn tasty!

    I love the chef. He's got a mind that's bigger than himself. He has great personality and life approach. Too bad about her gf marrying another guy. Sometimes we can't comprehend but that's the beauty of letting go.

      That is not a massive crack. The crack you see on the floor is actually for water drainage, you will also see this in Ramen restaurants in Japan too.
      It is for the restaurant owner to pour water in the drainage or they would clean the floor tiles by pouring water on the floor.

    Sensei is the type of guy whom you'd love to share your problems with especially when you are somewhat broken or even something you have in your heart that you want someone to hear you out. Man, I'd love to talk to sensei when time comes.

      Really ? you could not have been trained in Europe this is a classic method of making Beurre Manie which is used to thicken but here its on a larger scale ! Check Larosse Gastronomique or any classic French Chef !

      agreed this is an uncooked roux...which, thinking about it, I'm not apposed to. It is a good quick fix thickener but also not bechamel cuz no dairy. I'm very curious what a restaurant that small needs that much preped thickener for?

      Forget the bechamel sauce, what about the general cleaning? ( or the lack of it ). Min 13:33, check the mini fridge door. Isn’t H.A.C.C.P compulsatory in jp?

    LOVE love love this new series! The mom and pop restaurants, old cafes, and grungy hang out spots were some of my best experiences in Japan. Cities like Tokyo can be overwhelming so these were great places to relax, drink, write, eat, listen to jazz music, read, smoke, chat with locals and fellow travelers, and take it easy. One ramen shop near my hotel I went to so much they thought I lived in the neighborhood lol. I loved watching the customers and the old men in kitchen; the pace, rhythm, and flow of running a shop. I hope they are still there when I return ❤ Great Job Paolo

    I would love to see Day in life of a Vet !!! I am intrigued to see the variety of pets you have, also laws, restrictions etc. Ohh also maybe a zookeeper or a local farmer with horses and cows and goats lol. Can you tell I love animals ! Maybe Wolfie when he is older you can get a family pet.

    I really like his attitude. The act of drinking in the kitchen is considered wrong in some places but for me, i like that. But for some serious things like hygiene and cleanliness of the place that has to be serious because you are dealing with food

      I wouldn't want to change the "character" of that kitchen too much (although some would call it something else.) I would, however, be willing to pitch in for a couple of bags of of Quickrete to fill in that trench in the floor. Sensei gonna twist an ankle!

    That restaurant was kind of (very) grungy; especially the cabbage shredder area. Not what I would expect from Japan.
    Maybe you could do a video on the day in the life of a health inspector. That place needs a serious deep cleaning and repair to just about every surface.

      I kind of like it. It gives more to the back ally feel. Looks like the ingrediencies are fresh, which is the most important part. The gritty parts of the kitchen is in the open so you can turn around if you don't like it.
