FYI if you put your dough into plastic wrap then shape it into a log then freeze it you can slice really thin.

I am diabetic and have high blood pressure. I started doing Atkins last year and it is the only diet that has not only helped me control my weight, blood sugar, and blood pressure, but has also resolved many of my other health issues: sleep apnea, IBS, fungal & yeast infections (tend to go with diabetes), nausea and many others. It really makes me angry that for decades doctors would scare me away from Atkins, but everything they told me was not true. I finally found a doctor who would believe me when I said that I wasn't cheating on the DASH/Diabetic/Mediterranean diets they had put me on and that they didn't work for me. He suggested Atkins and it has been like a miracle for me. Love this way of eating.
Atkins are great low carb option, but a lot of their products are full of maltitol which raises your blood glucose just like sugar - which is bad.... Ketoconnect who you feature as one of your recipes here actually do a video where they compare different sugar replacements using glucose and ketosis monitors. Maltitol rated bad - sorry to hear this myself as I currently have 3 different types of Atkins choc bars in my fridge that I've been using as a dessert

If you aren't vegan, you can skip the flaxseed and water in the almond crackers, that is used to replace an egg. Just use an egg (or egg white) instead of the flax seed and water. (You might need a little water or melted butter to wet the almond flour enough.)
I use Parmesan Crisps as chips with my sandwiches. (I use lettuce instead of bread.). But I will definitely check some of these out! Thanks for taking the time and going to the expense of making all these recipes. It helps us all save money and time. I also want to say that I respect you for sending us to the original recipe sites.

As someone who loves snacking, finding low-carb options can be challenging. But with these recipes, I can enjoy crispy and flavorful crackers without derailing my keto goals. Can't wait to try them out!
