Recipe:
2 ⅓ cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon nutmeg
2 eggs
1 cup brown sugar
⅓ cup vegetable oil
2 cups shredded zucchini
2 teaspoon vanilla
1 cup sour cream
1 cup chocolate chips
1. Grate the zucchini and set aside.
2. In one large bowl whisk together the eggs, brown sugar, oil, vanilla and sour cream.
3. Sift in the flour, baking soda, baking powder, cinnamon, nutmeg and salt.
4. Give everything a stir just until the flour gets mixed in, then fold in the zucchini and chocolate chips until combined.
5. Spray a loaf pan with cooking oil and add the batter, optionally you can top the batter with turbinado sugar.
6. Bake in the oven at 350°F for around 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
7. Let cool for 30 minutes in the pan, then flip over to release. Cut into slices while still warm or completely cooled.
