This is why we LOVE YOU!! LOL This is a classic pinch yo pennies, feed yo kids, feed yo self kinda meal!! Lol I made a similar meal myself today. Baked chicken, mashatatos as my youngest son calls them, I mixed a can of greens with some cabbage and put in a turkey tail to simmer with, creamy chicken rice, gravy and cornbread. I recommend adding parmensan cheese at the end. It is in the category of ingredients that lose flavor if cooked. Those little flakes are not meant to last an entire hour at 350 with retention of any existence lol

So I made this today... meatloaf was EXTREMELY SALTY. IF I make this again only adding half a packet of beef mix and no added salt. I'm glad I didn't add the Parmesan cheese. I will make fresh roasted garlic to add to the mashed potatoes. The roasted garlic packet made the potatoes taste too processed plus I had to add milk.

I love this but I absolutely cannot stand ground turkey!!! Especially in something like meatloaf or spaghetti. I'm old school and remember when ground turkey was first introduced in the late eighties and came in a tube like some sausage still to this day. It had fine bone fragments in it!!! Absolutely inexcusable and I never went back down that road. I'm sure it's better now packaged in trays like ground beef but I just can't.

I don’t think you’re BA. You look Caribbean. We can tell who our people are by looks, mannerisms, cooking, verbiage, and our in home traditions etc. Cornel corn and mashed potatoes are not soul food but it is American fare. Our parents/grandparents/elders cooked corn at home many ways (the corn comes from our indigenous roots) but cornel corn was usually just served in school
