Ingredients:
Sweet potato pies: (Makes 2 regular pies however could also make 2 deep dish pies)
3.5- 4 lbs sweet potatoes
12oz evaporated milk
1/4 tsp salt
2 tsp vanilla extract
1/8 tsp nutmeg
2 tsp ground cinnamon
1/4 cup brown sugar
1/2 cup granulated sugar
4 eggs
2 tbs plain flour
1/4 tsp lemon extract
1/2 stick butter
2 pie shells
Meatloaf:
1.25 lb ground beef
1.50 lb ground pork
1 tbs EVOO
2 envelopes onion soup mix
2 tbs ketchup
2 tbs water
16-18 butter crackers
black pepper to taste
2 lrg eggs
2 pkts McCormick's brown gravy mix (follow directions - you may even need 3 pkts)
Fried Chicken:
3.5 lbs split chicken wings
Seasoned batter:
2 cups plain flour
2 tbs paprika
1 tbs seasoned salt
1 tbs garlic powder
1 tbs onion powder
1 tbs Slap Ya Mama
1 tbs kosher salt
1/2 tbs ground mustard
1 tsp black pepper
1 tsp celery seeds
Wet batter:
1/2 cup seasoned flour
1 cup water
1 egg
Mashed Potatoes:
3-4 Large russet potatoes
12 oz half and half (may need more or less)
1/2 - 1 whole stick butter
1 tsp garlic powder
1/2 tsp onion powder
Corn:
20 oz frozen corn
1/2 stick butter
1/2 tsp salt
1-2 tbs sugar (optional)
No extra water needed
Other:
Vegetable or canola oil for frying

Some people use yams when making sweet potato pie...that's because some people don't realize that a yam and sweet potatoe are two different things, similar in taste and look a lot alike but not the same.

Mmmmmm, I am a great cook! I am a older than you but I learned from you today and OFTEN use your recipes. I have never been disappointed! Love the way you do the egg/flour mixture for the fried chicken ! I make my sweet potatoes very similar even the lemon extract except I add a bit of Yellow label Grandma’s Molasses. I love you!

We use a hand mixer to get rid of strings, but go the old fashioned route to blend.

This looks so yummy. Thank you for baking those sweet potato for the pies and putting brown sugar in them. I see a lot of people that boil there potatoes (nothing wrong with boiling your potatoes) but when you bake the potatoes you get that natural sugar. My mother told me to bake the potatoes and use brown sugar because it gives the pies a rich beautiful color. We eat with our eyes first. 🙌🏾🙌🏾🙌🏾

Hey Miriam I love all the beautiful meals you’re whipping up! 😄 Would it be possible if you could do more plant based/meatless meals?
Miriam, do me a favor and fry chicken using arrowroot flour. I have celiac disease and can't use flour, but arrowroot puts flour to SHAME. You don't need to do anything special. Don't even season the flour. Only season the chicken and make sure it's minimally wet with only water ( no egg, buttermilk, none of that). You don't want a thick coating b/c arrowroot will get gummy. But just coat seasoned chicken and let sit in fridge on napkin (bc that arrowroot will come up off that chicken lol) for about 30 mins. When I tell you, you'll have an ASMR bc it's the crunchiest chicken you'll ever eat and the crust is light and not heavy. I even remove my skin from all my chicken due to health issues and you don't even miss the skin. Please try and label video, "Gluten Free Fried Chicken" because all those GF recipes with almond flour and other crap isn't cutting it. I found my recipe after searching for so long for a gluten free alternative.
