Add salt to your taste and toss. • Place eggplants on a plate and pour the tomato sauce on top. Sprinkle fresh parsley. Heavenly eggplants and tomato is ready for you. Pickles • Pickles are easiest, delicious and fundamentals for a mezze table. You can use whichever you like to. I had okra pickles so I served them today and i will show you have to make delicious Turkish pickles soon. Melon and White Cheese 2 slices of melon 2 slices of white cheese • Melon and white cheese(or feta as commonly known name) are essentials for a mezze table. For each person cut a slice of white cheese and melon. You can serve melon on top of the skin always.

Refika's main channel does have 1,58 million subscribers as of June 2020 but it's in Turkish and I think Refika doing another channel for the international audience is amazingly wonderful. I do speak several languages including Turkish so I have the best of both worlds of Refika's skills and wonderfull personality.
My uncle does the babaganoush like that. He calls it emtata. We live in Argentina, but our grandparents came from Damascus. We still cook those dishes for the special ocasions. We eat our okra (bame) stewed with meat and pureed tomatoes. And we make our own leben because it is hard to find here.

You can 😊 I buy my from my local Turkish supermarket If you got one near you it might be worth checking it out I started making my own yogurt now but I used to get mine for about £2.50 for a kg pot You’re totally right Greek yoghurt just isn’t the same, especially supermarket ones.
iYou iTry I didn’t mean Greek yoghurt doesn’t work and also Greek yoghurt is nice I like it and I would happily eat it but it doesn’t taste the same as suzme yoghurt 😊
Greek style, it’s not even proper greek!! It’s most of the time Sweeten as well! In Spain, I never take that kind of yogurt, except If it’s proper Greek or Turkish. Try FAGE brand, if you find. They are around the world and you can eat w salty meals or add honey etc amd have it as a sweet dish.
It won't be the same but you can take several layers of cheese cloth, lay it on a strainer ( make sure the cheese cloth covers the strainer well with quite a bit of overhang), put a bowl under it. You can drain the excess liquid of the yoghurt like that. Let it drain in the fridge for a few hours or until you have the desired consistency. Hope it helps!
I've been home cooking for 50 years and I am a devotee of the late Marcella Hassan but I have learnt the best ever tips on this channel. Starting tomato puree off in some bubbling butter .. fabulous. It makes such a difference. Leaving 2 cloves of garlic whole to later mash it easily .. I did all of it. Bravo!!

There are many "greek-anatolian" recipes that I knew we had in common, but with this video almost every recipe we use it here to in Greece. It is amazing how mixed the cultures are. Dear Refika thank you for all this recipes just I wanna add somethings, I am sure Atom would be great with Labne but I think foreigners should see how is the Turkish yogurt, diffrences with others. When I watch Greek chiefs, they emphasize Greek yogurt, Greek virgin olive oil etc.I think maybe we need somethings like that.I say this as a Feta cheese fan which is seems same White cheese but has much better texture. Im like the eggplant - dangerous in the kitchen, when I cook it looks like a bomb went off!! My husband always asks "Are we ever going to have a clean kitchen?" I am Greek, my husband is Dutch my sister lives in Japan and my brother in law is Japanese. For eggplant done very quickly, you can pierce it, and cook it in the microwave for 8 minutes. It doesn’t get a smoky flavor like when done on the fire, but it can be a good time saving option. Great video!

Refika's main channel does have 1,58 million subscribers as of June 2020 but it's in Turkish and I think Refika doing another channel for the international audience is amazingly wonderful. I do speak several languages including Turkish so I have the best of both worlds of Refika's skills and wonderfull personality.

My uncle does the babaganoush like that. He calls it emtata. We live in Argentina, but our grandparents came from Damascus. We still cook those dishes for the special ocasions.
We eat our okra (bame) stewed with meat and pureed tomatoes.
And we make our own leben because it is hard to find here.
I have no idea how I stumbled upon your videos on UA-cam this week, but BOY... am I glad I did - TOTALLY HOOKED! Even though I'm here in North Carolina, USA, and some of the ingredients you use are not available here, you always mention some substitutions which will work in place of them - thank you for that. Your recipes are STELLAR! Makes me want to move to Istanbul JUST to be able to eat this rich and VIBRANT food. Your videos are fast-paced and inspiring - THOROUGHLY enjoying them. I will be making 2 of your HUMMUS recipes this week to start (the original and beetroot).

Greek style, it’s not even proper greek!! It’s most of the time Sweeten as well!
In Spain, I never take that kind of yogurt, except If it’s proper Greek or Turkish. Try FAGE brand, if you find. They are around the world and you can eat w salty meals or add honey etc amd have it as a sweet dish.
It won't be the same but you can take several layers of cheese cloth, lay it on a strainer ( make sure the cheese cloth covers the strainer well with quite a bit of overhang), put a bowl under it. You can drain the excess liquid of the yoghurt like that. Let it drain in the fridge for a few hours or until you have the desired consistency. Hope it helps!

I've been home cooking for 50 years and I am a devotee of the late Marcella Hassan but I have learnt the best ever tips on this channel. Starting tomato puree off in some bubbling butter .. fabulous. It makes such a difference. Leaving 2 cloves of garlic whole to later mash it easily .. I did all of it. Bravo!!

Your channel is amazing and every recipe I have seen and tried blown my mind. There are many "greek-anatolian" recipes that I knew we had in common, but with this video almost every recipe we use it here to in Greece. It is amazing how mixed the cultures are. When Covid is over, I will for sure come again in Istanbul everyone there is super friendly and the food taste like heaven.

Dear Refika thank you for all this recipes just I wanna add somethings, I am sure Atom would be great with Labne but I think foreigners should see how is the Turkish yogurt, diffrences with others. When I watch Greek chiefs, they emphasize Greek yogurt, Greek virgin olive oil etc.I think maybe we need somethings like that.I say this as a Feta cheese fan which is seems same White cheese but has much better texture. Your channel makes me homesick for my adopted family in Morocco. I have not been home to visit them since my last month-long visit on Oct. 23, 2019 - Pre-COVID. I miss the Moroccan Cous Cous so much. This video reminded me of when we went to a Tapas Bar in Berkeley California in preparation for our trip to Spain in 2000. Thanks so much I miss Turkey. Yesterday they finally had again the eggplant dish, I catch it so rarely and it's just so delicious and melting in your mouth. Im like the eggplant - dangerous in the kitchen, when I cook it looks like a bomb went off!! My husband always asks "Are we ever going to have a clean kitchen?" I am Greek, my husband is Dutch my sister lives in Japan and my brother in law is Japanese. We are a mixed family with a variety of cultural tastes, but I cant resist whats in our DNA, I just gravitate to Middle Eastern food, the spices the fragrances, the simplicity, you cant beat that!

For eggplant done very quickly, you can pierce it, and cook it in the microwave for 8 minutes. It doesn’t get a smoky flavor like when done on the fire, but it can be a good time saving option. Great video!
