- This simple Blueberry Cake is our family’s favorite recipe. It’s quick to whip up, it’s soft and light and perfect with a cup of your favorite tea or coffee. Grandmother’s recipe that is always a hit!

INGREDIENTS:
2 Medium Eggs
1 cup Granulated Sugar (200g) - amzn.to/2tXO5Gy
2 tsp Baking Powder - amzn.to/2oxFKKv
2 cups All-Purpose Flour (280g) - amzn.to/2ub1xrj
½ cup Sunflower Oil (125ml) - amzn.to/2o5adPA
1 cup Milk (250ml)
1 cup Blueberries (150g)
METHOD:
Preheat the oven to 356°F/180°C.
Mix the eggs and sugar until smooth and creamy.
Add baking powder to the flour and sift these into the egg mixture. Fold them in using a spatula first, then use a mixer to get smooth batter.
Pour in oil and milk and mix well with electric mixer.
Prepare your cake tin for baking by lining the bottom with baking paper and greasing the sides with butter. Pour the batter in.
Bake for 45 minutes or until an inserted skewer comes out clean.
Preparation: 10 minutes
Cooking: 45 minutes
Serves: 1 Large Cake (12-16 Slices)

Hi Julia, if I wanted to make a chocolate version of this, how much cocoa powder and all purpose flour would I use? I have made this cake so many times, always a hit. I made it yesterday with chocolate chips and added some almond extract, it tastes divine. It is even better than a pound cake.

Can butter be used instead of the oil?
I mixed some butter and sunflower oil. It turned out very good
Hi, can i use blueberry fillings instead of blueberries? 🙂
You could, but it would be a mushier batter so it might not set up so well like a normal cake would...try to replace a tiny bit of that oil with the filling and reduce the amount of sugar a bit...see if it helps :)
