Easy BLUEBERRY CAKE recipe - soft like a sponge cake but moist like a chocolate cake

  • Today quick and easy recipe, if you are in quarantine you can safely use the frozen blueberries that you have in the refrigerator. In fact, today we bake the BLUEBERRY CAKE 😋 perfect for breakfast but not only. I wrote the ingredients here so you are more comfortable. Let us know your experiences and give us your advice.
    INGREDIENTS:
    Sugar 200 g or 1 cup
    Egg 1
    Seed oil 110 ml or 1/2 cup
    Zest of 1/2 lemon
    flour 250 g or 2 cups
    Baking powder 1 teaspoon
    Salt. 1/2 teaspoon
    Milk 110 ml or 1/2 cup
    Blueberries 300 g or 1 cup
    cooking in the preheated oven at 180°C or 350°F for 41 minutes

    That looks lovely. I do have a little tip. If you coat the blueberries in flour before putting them into the cake mixture it will stop them from sinking to the bottom.

    My wife has the almost exact recipie with a couple variations.... double the fruit, mix 1cup sugar with fruit to bring out the juice, let stand for 30 mins. Beat 1 egg add to fruit then add 1cup flour, 1tsp baking powder, 1tsp cinnamon or lemon zest, bake at 375F for 30 mins or until tooth pick comes out clean. No butter in this one!
    Very simple & delicious cake if you eat cake or carbs.... which I don’t!

    Love love this recipe. Made it again, just took it out of the oven.
    I tweaked recipe a bit to accommodate my family.
    Added 8oz of stevia instead of regular sugar
    Added 1/2 squeeze of real lemon
    Added 8oz of milk instead of 4oz
    Added frozen very cold blueberries dusted in flour so they don’t sink to the bottom
    Baked in a banana loaf pan easier to cut.
    Baked at 350 for 47 minutes
    Turned out amazing and perfect cold too on a picnic.

    If you dont want the fruits to sink in the bottom of the cake dust them with a little bit of flour first. Usually works..usually..
    Ps. Dont know exactly why but this channel became one of my favourite!!!

      @@dragons8822 fried oil... the normal one!, And the pan, used a normal size very close to the one he used in the video!
      A tip for you, I've enhanced this cake recipe with DARK chocolate, Which I used instead of blueberry, Came out Amazing taste ;)
      I've replaced the blueberry with small chocolate pices "dark chocolate" And cover it as well with melted Dark chocolate....
      Till now I've made this over 50 times ;D...

    I just made this cake, I used avocado oil as I don't like seed oils that much. Turned out very nice. Maybe next time I try it with coconut oil instead, or maybe butter. For those having difficulties finding blueberries, please note that they hold very well frozen, so next time they are in season next to you, buy a big batch and store them in the freezer.

    I can imagine that this would pair nicely with cafe a lait. I wonder if freezing the blueberries prior to adding them to the batter would have an effect on the cake.

      I baked this and so delicious. I doubled the amount of blueberries because I love blueberries. I never baked with milk, just sour cream. Definitely don't substitute water for it -- the milk adds a delicious flavour and I plan to try this with sour cream next time. Thank you for this recipe!

    Our blueberry bushes did fairly well this year. I’ve never been able to convince the wife that eating cake for breakfast is ok but I’ll be making this and pointing her towards your description here 👍.
    On a side note we always seem to end up with more rhubarb than we know what to do with (I give it to the bin men, postman etc.). Maybe you can do something spectacular with rhubarb in a future video.

    250 gm flour was too much and it became a dough rather than batter. I had to add more milk and egg to make the batter right consistency. Please suggest.

    250 g of flour is only 9oz.
    I would follow 2 full cups 16 oz.
    I made it today using 250g of flour and notice it wasn’t enough batter. So I will be making it again using imperial measurements, even if I live in metric country. Thanks.

    I tried your recipe with a few changes. Used demerera sugar and sugar 1:1 and instead of blueberries I used a mixture of dry fruits, as only these were available
    It was simple and easy
