I never thought about it deeply...but it came to me recently that the reason I enjoy your channel so much is that you get right into the subject. I appreciate that so much...so many channels have intro's and music etc...I just want the info, you do just that...
Typically I don’t care for the taste of deer/elk but I canned some that was gifted to me, omgoodness, canning removes all trace of that gamey taste and it becomes melt in your mouth tender.
Tip: On my All American canner I put the weight on a long string (through a hole NOT on my #'s of pressure) and tie to the black handle on top. I never worry about finding my weight. I've only had to replace the string 1x after all of these years of canning.
I have never canned whole pork chops like that. I've only cut them up in chunks and canned them. So easy to turn into bbq sandwiches. Just warm it up and add the sauce. When you use the whole pork loin chops that you canned, will you please video it? I'm always looking for ways to use the food I can.

I am currently canning beanie weenies in pint jars. Made my own sauce. 1/2 cup navy beans raw in clean jar. 1/2 cup sauce and then fill with boiling water. De bubble. 75 minutes.. pressure canned

Bravo! I have canned for decades and it never dawned on me to cut pork loins into 'chops' for canning! Guess what I'm doing next..... 🤣 (I usually can the loins in strips and pork butts in chunks.)
Completely fascinated now as to how those chops will come out of the jars. My jaw dropped seeing you grabbing the spice containers with raw meat hands. I was thinking she has a solution, I'm sure. Washing the entire spice container. Of course. Couldn't do that with many of mine, but the plastic stuff we try out will probably come clean and still have readable labels. Would never have crossed my mind to try to grab them like that, but I will now. So much better than the dry cracked hands from so much hand scrubbing every time I turn around.
Oooh you’ve inspired me!! I’m going to buy some of that Walmart Al Pastor seasoned pork for carnitas and raw can it. I recently canned chunks of pork loin in broth for a quick Marsala which was great. Added a jar of Home canned carmelized onions and mushrooms. I also use pork/mushrooms/onions with a dollop of apricot jam as a sauce.
I found large natural bagged pork loins on sale today and am going to do the exact same thing. But with one caveat. Mark lids before canning so I know what the h*!! they are and don't have to open three bottles in January to find what I need or want! Great idea.

We can almost all of our meat. That last time I canned pork chops they were all stuck together. After watching your video I see what I did wrong. I am going to put in the jar like you do so they come out separated. Hope you have a great rest of the week!
I got a good deal on a big pork loin a while back also. We sliced it into chops for the freezer. But we recently ordered a half hog from a local farm so now I need to make room for more pork in my freezer. 🤣 This video will be my solution to get the pork loin onto the shelf. Thanks! 😘

BTW, I know you have a freeze dryer - I wanted to tell you and Todd that instead of canning grilled onions, you can freeze dry them. Prep exactly the same way, then load them on the trays to rim height. They turn out crunchy and sweet/savory, absolutely delicious easy to break apart or crumble. You can use them on anything, salads are especially nice - or just eat them out of hand as a snack. I also turn grilled onion into powder after FD, then you can use it as a giant pop of umami in soups and stews.
I would love to see you using some of these! I always thought it would come out as shredded pork no matter what they went into the jars as. Very excitkng!
Just beautiful! Lovely jars of food from a lovely woman!! U have given me SO MUCH more confidence in my pressure canning!! Yesterday morning as I was canning chicken meat, I decided "I" was going to dice up some smoked pork chops that we still had in our freezer that we just did not care for. I thought; I can do this! I did it and yep, we tasted it and it is better. Plus for fun I added some diced ham to some of the chicken and it gave the chicken a smoky flavor which was yummy too! Thank u Rachel!!

One of my favorite canned meat's is pork. I can it plain, and my favorite way to can it is to season it well with my homemade rub seasoning. I could just eat it right out of the jar. Cold or hot, it is delicious. I like the fajita seasoning idea. Chicken would be good with that as well. Thank you and God bless.

I have never canned pork, but have canned beef and chicken and both come out delicious but they don’t hold their shape, I other words it is shredded chicken and shredded beef. I am intrigued about the texture that the pork chops come out as when you open the jar and also curious as to why you cut some thick and some thin.. I am prepping my pork loin today and before your video was just going to cut in up in cubes…thank you!
I got the same deal on loin months ago, canned that stuff up! Lately I am been snapping up deals on chicken quarters - can them in quarts with water to create broth.
My raw pack meats never make that much juice! Wow!! I’ve resorted to adding a little broth just to ensure the higher level of liquid-even though I know it doesn’t need to be covered all the way. I feel better with more liquid. Looks amazing!
When mine first come out if the canner it looks like a lot of broth, but after it's cooled it's half the amount. Maybe the meat reabsorbs some of it (?)

Canning meat is great! Super nice to grab something off the shelf already made and just needs warmed. Chicken, ground beef, stew meat and beef stew. I haven’t tried pork yet but now I will! 😊
Once you can meats and see how easy it is, you’ll wish you had started earlier. Nothing nicer than adding canned meats to rice and potato dishes and all the mess and cooking was already done in bulk. Its the best way to save money on the sales without eating up freezer space! 😉
In our family we ALWAYS remove ALL kind of rings, jewelery etc. from our fingers and we don't wear loose/open knitted clothes when preparing any food. Basic food hygiene is key, in the private kitchen as well as in a professional setting.

You may have done it and we just didn’t see it, but many others on UA-cam have suggested using olive oil around where the lid meets the pan to make it easier for the lid to engage with the canner bottom.
Looks promising for future dinners that's for sure . Unfortunately i don't have or will ever own a pressure cooker . Some bad memories so i stick to waterbath. Anyhow , thank you for what you do and God bless!

Would love to see an episode where you open a couple of those jars and show us what to make with them. Something outside of the regular Mexican dishes. People seem to think that's all you can make with them. Just from eating the odd failed sealed jar of chicken breast for dinner, I know there's more we can do than a chicken salad or chicken taco.
I use my home canned chicken & hamburger ALL the time. Grab a bag of Knor Chicken & Broccoli rice & add the chicken & some cheddar cheese...yummy! My kids favorite! I make all kinds of casseroles with the chicken, too. Makes it so much easier than having to cook it before I even make stuff. Nice to have it right on the shelf.

good idea to do pork chops, I usually just do pieces and do half pints...(just me), but I do add chicken or beef broth, so can have a nice gravy afterwards.. Thanks for the ideas

Pork gives your tomato sauce a wonderful flavor. Especially if there is bone in. My mom used pork neck bones.

Mine didn’t have much juice, so there is meat above the liquid. It’s still good, right?
