How to make vegan keto chocolate “Quickie Cookies”

  • These brownie-esque dark chocolate “Quickie Cookies” are to die for. They’re wholesome and crunchy and soooo easy to make. Wonderfully yummy.

    INGREDIENTS
    ----------------------
    (this recipe makes approx 12 cookies)
    50g ground almonds
    50g lupin flour
    (or replace the above with 100g fine almond flour, super fine/extra fine would work well)
    “Flax egg” - 1.5 tbs ground flax seed (or ground chia seed) + 4 tbsp hot water
    2-3 tbsp raw cacao powder
    2.5 tbsp Truvia sweetener (or any sweetener of your choice. Adjust the amount accordingly)
    50g Coconut oil
    A pinch of salt
    50g chopped nuts (or sugar free chocolate chunks)
    DIRECTIONS
    -------------------
    1. Prepare “flax egg” by adding ground flax seed and 4 tbsp hot water in a bowl. Mix well and leave to rest for 10-15mins.
    2. Add the remaining ingredients in a mixing bowl, pour in “flax egg” and mix all the ingredients together with a rubber spatula till it forms a firm dough.
    3. Shape the dough into a round loaf and wrap it with a baking sheet. Refrigerate it for 1-2 hours. (or freeze till you’re ready to bake it. Remember to defrost first)
    4. Slice the chilled loaf with a sharp knife into desired thickness. Place the cookie dough slices on an ungreased baking tray.
    5. Bake in a 170°C/325°F preheated oven for 20-25 minutes.
    6. Leave to cool to room temperature. And enjoy!

    I just added the recipe to my carb counter and for 12 cookies these are a little less than 1 gram of carbs each!!!!!! That's fabulous Fan! Thanks again!

    I have to say that this is the best recipe I have found yet for keto cookies! Thank you
    I used 80% ground almonds and 20% coconut flour, (Flax eggs are fab, new to my cooking),Lindt 85% choc and pecans and I made them in triangles :) I can't stomach alternative sugars so they are sweetener free but the choc is enough to satisfy my cookie needs

    I wanted to hit the like button before the video ended...LUPIN flour ...yes! I am sure these cookies are quite low in carbs thanks to lupin four. Would love to see more recipes with this flour. Going off to my kitchen to make them now. Thank you for another amazing recipe❤

      @@HeavenlyFan I just started keto after getting intermittent fasting established first. I will be stocking these flours so I can make some of your delicious recipes.
      Would this biscuit recipe make a good 'cup' so I can copy a heavenly, but sadly high-carb locally produced almond butter cup? It sounds like it might be perfect! I just gotta order some lupin flour!

    I have added raspberry to it , just made it more watery and soft, so next time I will use 3 tbs of water with the flax meal rather than 4!

    LUPIN flour can cause allergic reaction.I made fries months ago, tasted great! NECK swelled up & hives! Never been allergic to anything! Be cautious

    Just popped a roll in the oven, I didn't have Lupin flour but they look wonderful. I have to admit I tasted the crumbs in the bowl and they were delicious I cant wait to bake them. Ill have to order some Lupin flour. A fresh cup of coffee and one of these cookies will make my day. Ill put the recipe with all almond flour in the Happy Forks recipe analyzer for the carb count.

    Looks yummy! Can lupin flour be substituted for chick pea flour? They are both beans, so I suppose this substitution will work.

    Those look amazing!! Thank you so much for sharing the recipe. I have never heard of lupin flour, I will have to check that out. You also have a very interesting dialect, there are so many layers to it that is it difficult to determine where you are from.

      They should stay fresh in an air tight container for at least a week. I haven't left them longer than that.

    I only had chia seed to make the fake egg, which you suggested as an alternative but you didn't specify the amount. I guessed the amount but my recipe turned out very dry in the mouth when eating it. I used exactly all your ingredients except the ground flax seed. Can you advice the amount of chia seed to water for this recipe please? Thank you.

      I tend to use unroasted nuts for baking.

    I'm sure you knew someone would ask this so I'll be that person.. if I wanted to use an egg instead of the flax egg, would it just be one? Also, if I wanted to use a bit of the brown sugar sub for some of the Truvia, is that possible?
