not healthy. cooking more to scratching the wok. the oil to fry chicken already so black still use. when the oil reached dark brown, can consider start to change. High cost if always change oil? i bet the price per chicken is more than RM1/2. If fry chicken until the oil become so black, and manage to sell all the chicken, changing oil is not a problem.
