Green Fig Salad Recipe (green banana) - Chris De La Rosa

  • Learn how to make green fig (green banana) salad as it's done in St Lucia, with Caribbean cookbook author Chris De La Rosa. Chris will show you how simple it is to make this tasty green fig salad with slight variations as to how it's traditionally done in St Lucia.
    If you don't already know, green fig is the name associated with green cooking bananas in the Southern Caribbean.
    For making this green fig salad, you'll need..
    5 green cooking Bananas (green fig)
    3 scallions
    1 cup diced red bell pepper
    1/4 teaspoon black pepper
    1/2 teaspoon olive oil
    1/2 cup mayonnaise
    1 clove garlic
    1 cup shredded saltfish (salted cod - prepared)
    1 tablespoon parsley
    2 sprigs thyme
    Additionally you can add 1 small can of peas and carrot, 1 seasoning pepper (pimento) and a bit more mayo if you like it more creamy.

    I can't wait to try out this dish. I usually mash the bananas add tuna instead of salt fish and a lot more mayo, as well as the mixed vegetables. A lot of my Lucian friends rave about this dish and I can finally try it for myself. (Dominican)

    I am from St. Lucia, and looks delicious. We also use mixed veg, btw, for the salad usually which is natural...I would love to see you do more St. Lucian recipes, or Salara.. which I've been looking for recipes to make.

    chris chris chris! I have been looking for a video on this recipe for years. I had an acquaintance from st. lucia who introduced me to this dish. ever since, i have been trying to replicate the recipe. this is pretty close to the way she made it for me and she used frozen thawed mixed vegetables. thank you for sharing this recipe!

    In Barbados we use pickle cucumber with the green banana but I will try this method

      yes, fully unripened

      the green figs we use are the green bananas sold separately from the yellow bananas in the supermarket. the green plaintains are different but could be used the same way.
