INGREDIENTS WITH GRAM AMOUNTS
For the brine
⅓ cup white vinegar
⅓ cup water
⅓ cup sugar
3 tablespoons vegetable oil
½ cup onion - grated
1 ¼ teaspoons fine sea salt
½ teaspoon white pepper
Remaining ingredients
1 medium green cabbage finely shredded, about 10 cups worth
¾ cup mayonnaise - plus more to achieve a smooth consistency
1 small/medium carrot - shredded

The very 1st recipe I made from Jim was chicken parmesan. It was the very first time the breading stayed on & it cooked perfectly.
I'm absolutely in love with his stuffed peppers & linguine & clam sauce, & his mushroom barley soup just filled my heart with memories; it's exactly the way my Momma made it. She passed away without leaving anyone the recipe so I hadn't eaten it in 24 years. I cried & smiled while scoffing down the whole pot of soup.
be cuz there carot involved .... you can put a 3rd cup of carrot juice in a tomato soup cambells and you wont tast it .... also carrot + brocoli + teriyaki iz amazing dont add onion to that

Thank you so much for this one, especially, as I've always been a cole slaw fan but never knew how to replicate a classic deli style. Sure other slaws are good but this variety has been missing from my life for too long.

I made your potato and macaroni salads for the 4th of July and they were a huge hit. A gave some Northeasterners their Ratatouille moment. I'll definitely give this one a whirl as well. Oh and I absolutely concur about the mayo, every deli I ever frequented on Long Island used Hellmann's. Every once and awhile you'd have a friend who belonged to a Miracle Whip home and was subsequently shamed and disparaged accordingly.
(edit) You should also add Chinese Takeout to great food institutions of the New York area. Trying to get half-decent Chinese food in the South is as difficult as good pizza or bagels.
I know what you mean about Chinese food.
I lived in South Florida & the Chinese food there was as good as in NYC but here in the Pacific Northwest- egad.
I've taken to making my own Chinese food. I've yet to be bold enough to make egg rolls or wontons but I can make some mean entrees. Check UA-cam & you'll find some great Asian recipes.
I don’t get how Americans are hung up on Americanized Chinese food. It’s good but it’s not that interesting unless if you’re seeking nostalgia

The recipes I use are from Asian cooks.
It’s gotta be Dukes if it’s down south. Just saying, better taste, better thickness, “cleaner”, etc. Plus, barely any vinegar.
Definitely want to see the cucumbers. I love deli cucumbers and have never quite duplicated them.

Midwestern Deli cucumber salad is sliced cucumbers, sliced red onion, diced tomatoes, and bottled Hidden Valley Ranch Dressing, the original. The amount will depend on how many cucumbers you use. One big bottle does a lot.:)
Saving the juice is a great tip…. So many things you can do with it…. and please (PLEASE!!!) do the cucumber salad recipe!!
And thanks for being sure to tell all those watching, to use the “guard/handle” when using a mandolin…. Other UA-cam cooks make me cringe when they use a mandolin bare handed…. Accident waiting to happen….
What can the brine be used for?
@@annabelmacrae5256 it can be used for pickling; a base for “vinaigrette” type of salad dressing; a (very) light spritz or two in a vodka martini (YUM!!); a marinade for chicken thighs; …..
Yes yes yes to the cucumber salad - I’m British and l love your channel. New York delis we’re a revelation when l came to NY; that and the lovely people, much friendlier than l expected. Definitely saving my pennies to come back and visit.

As a native New Yorker, I now find it very hard to find really good coleslaw (or macaroni or potato salad) like what you made here. Nothing in New York is like it used to he. I think the carrots should be mandatory - adds nice color and crunch. I would gladly top this on a corned beef and Swiss on rye with Russian dressing. Guess the kid ain't into coleslaw (or maybe he was at school). Another great vid!
Or maybe because Tara is the family authority on NY deli food? James needs to get a few more years on him for that kind of tasting.
Amen. Nothing like what it ain't what it use to be. Chicago too. Yes, carrots are MANDATORY. Now, I am wondering if there is any difference with the the coleslaw I get from the slaw topped in BBQ from my local joint in Chicago? Is there a Carolina colealaw?

I can attest that this is NYC Deli Cole Slaw as are the Potato salad and macaroni salad recipes. I worked in the food industry as a kid and this was how it was made except the quantities were much larger. Good Job.

I'm Belgian, coleslaw salad is not very popular in my country but for me is one of the best salad in the World.
As an 80s kid, cole slaw was just EVERYWHERE! I could always take it or leave it but I’m taking notes on this video cuz my wife simply loves the stuff. I’ll cook anything for her. I love the variety of dishes/side dishes taught on this channel! I love that it’s not all entrées.

And draining it some people do not drain it after they let it set and when you get that in a deli it's quite disappointing he said to save the Brian but did I miss the part where he said what to use it with

so glad I watched your deli videos........i learned many new tricks including the brining of the cabbage...........also, the breaking up of the tuna and letting it rest overnight was good in that tuna salad video
I like some diced green pepper in my coleslaw. It gives color contrast for look appeal and adds flavor. Most coleslaw that I have tried have way too much mayo regardless of the brand. I do not like coleslaw mayo soup. My mom was Polish and she made a fantastic coleslaw. Thank you for posting all your recipes and yes, I would like to see your cucumber salad made with recipe.
I do not like green pepper in mine. Too strong of a flavor.
Acquird taste. Just a difference between American and Euro tastes and what we have grown up with.

Sub in dill pickle juice for the water and some celery salt in place of the salt makes a nice twist.

even though the brine isn't my personal preference, i can appreciate the intention to show people how to get the authentic deli taste. i'm sure there's a lot of people who will get major nostalgia when it tastes just so. for my husband it's taylor ham, egg and cheese on a bagel. sadly you can't get anything that tastes even similar to taylor ham in europe. but i did learn how to make bagels that give him the back at home feels, we've never found any store bought or from a bakery in europe that will pass the taste test.

This is a great tasting recipe. I'm from Australia, and have zero clue what NY deli coleslaw should taste like, but as far as great coleslaws go, I'm thoroughly convinced that the brining technique is gold!

I never use a recipe, and I'm not from NY, but that's almost exactly how I've made it for over 40 years. It's one of the most addictive foods I've ever eaten, (so I don't make it much anymore because I eat it til it's gone).

That's basically my mom's coleslaw. We're French Canadians in Montreal. She doe's it with or without mayo. I prefer it with more carrots and less sugar.

And YES, please show how to make the NY deli cucumber salad. 👍🏻 I would also like to see more classic NY deli style sandwiches like a Pastrami sandwich or Roastbeef etc. I am in Europe and I obviously have no clue how many good sandwiches are out there. FYI, Hellmann's mayo is known as Best Foods mayo here on the west coast. When I first moved to CA I thought I'd have to order Hellmann's off the internet, but a kind neighbor filled me in.

When in high school back in the 70's I got a job working at a New York style delicatessen which I held for four years. It was owned and operated by a wonderful older man that had been in the deli business in New York. Everything that could be was home made including the salads. A choice of mac, potatoe, or cole slaw was served with each sandwhich along with a pickel spear. I loved working there as I had access to all these wonderful foods. The salads were all dressed with the same sauce which was a heavy mayo and corn syrup mixture. Why corn syrup? I don't know but they were a hit with the clientele.

I made exactly as shown and didn’t change a thing because I wanted to see what authentic NY deli coleslaw was like. It was easy to make and turned out great. Very tasty. I really like the thin texture. Unless you’re really good with a knife and extremely patient, I would say using a mandolin might be one of the most important things for this recipe.
For those of you who want to experiment go ahead, it probably won’t be bad, just not authentic as advertised.

This was the best coleslaw recipe I have made, I used precut coleslaw mix and it was fine, brined it overnight, this will be my go to recipe.

T & J, you're killing me. Can't stop thinking of these NY deli foods you've been coming up with. I made the Italian peppers egg and cheese on a bagel sandwich - using a microwave - for my Midwestern boss at work, and he walked over to my office and handed me $100 to make more. I used your favorite brand of olive oil and a pat of butter to cook the red peppers and onions with the egg. Wait til I make him this coleslaw. I need to find him a ny Italian wife so they can invite me over for dinner. And I agree with the other commentors, we need your cucumber salad vlog and don't forget the deli chicken salad.
