    About Me:
Chef Keith’s exciting take on Indian cuisine uses his passion for the spices and flavors of the Indian subcontinent with fresh, seasonal ingredients from New England farms to create a dining experience like no other.
Years ago, he dipped a charred piece of bread into a rich gravy that soaked each crumb like a sponge. He raised it to his mouth and closed his eyes, and that is where his journey began.
Chef Keith is a 5x author, restauranteur, and public speaker who grew up in a small city in New Hampshire in the United States. Growing up in kitchens, he learned how to cook from many amazing western chefs. Each chef would impart the knowledge passed down to them by their mentors. It wasn’t until much later in life that he would try his first bite of Indian food. He began learning under an Indian home cook and went on to study with food archeologists and historians from across India.

6:39 The best pork dishes of India are from the North East. You have to try those!!
Naga Pork Ribs are the best!!
Pork with bamboo shoot along with a plate of rice is another great Indian (North East India) delicacy
Then there is Smoked Pork cooked with bhoot Jolokia (Naga Chilli/Ghost pepper since it originates from North East India)
Tupula Bhaat (rice steamed in banana leaves)
    Pork with til (sesame)
Pork with lai leaves ( a seasonal herb local only to the north east region of India)
    Pork with Axone (fermented soyabean)
    Pork cooked inside bamboo
    And many many more dishes!
There are some unique and amazing fish dishes as well that are local on to North East
The famous comfort food from Assam.
Massor Tenga (River fish cooked in a tangy tomato curry with no classic Indian masala/spices. Very healthy and yummy. Also it's light and keeps your stomach cool. Usually eaten with rice)
Another delicacy of Assam is Duck. Duck cooked with ash gourd
    Dal cooked with elephant apple

5:41 There is another thing you might try in India. It's like bao but it's actually a Tibetan dish called tingmo. It doesn't have a filling but the buns are like bao and you have it with datshi. You will find it in Tibetan refugee colonies specially in Delhi (Majnu Ka tilla). Huge Tibetan refugee market.

U have to try "Kitchri", Poor man's feast. When made with correct blend of spices, and eating with Mango Pickle, it can challenge and defeat any dish put front of it. Seriously it can.
Also excellent Pani Puri is hard to find, but if u do, it can challenge any snack items.
    Thank you.

And the best pork in India is beyond doubt in the North East. Nagaland smoked pork with Bamboo shoots and ghost chillies. You do get good Naga restaurants in Delhi. Hope you will try those when in Delhi. There is Hornbill in Humayunpur, Bamboo Hut near GTB Nagar, and Naga Kitchen in Green Park, to suggedt a few. 😊
