Ingredients:
4 eggs
½ cup sugar
2 cups coconut milk
¼ cup melted butter
2 cups regular rice flour
2 tbsp baking powder
½ tsp salt
Grated processed filled cheese (optional)
Salted egg slices
*Bake at 190C for 25-30 mins
*Spread softened butter while still warm
*Top with more cheese or grated coconut
*Using 4 inches ensaymada mold, this recipe makes 10-11pcs

Same sa recipe ni Chef RV hahaha actually tinry ko sya na rice flour pero ang kinalabasan hindi maganda. I suggest 1 1/4 cup Glutinous Rice Flour and 1 cup Rice Flour. Or 1 cup Glutinous and 1/2 cup APF and 1/2 cup Rice Flour. Iba pa rin yung may glutinous. Talagang legit ang lasa and bibingka talaga yung texture😊

Nag trial and error na rin ako ng recipes and. I've tried your 2nd suggestion with few adjustments. 1 cup glutinous rice flour + 3tbsp , ½ cup ng + 3tbsp rice flour then ½ All purpose flour. 1 cup fresh milk 1 cup water. 2tbsp baking powder. 3 eggs Then mga ¾ white sugar or less depende sa tamis. I've used baking tin. 18-20 pcs. Super sarap ng kinalabasan. Medyo makunat siya dahil sa glutinous rice flour pero fluffy dahil sa rice flour at APF. 😊

You will miss on lots. Especially flavor and texture. If you do you will end up with something like a piece of quiche!

tried this po... masarap. Pero hindi ko ma-achieve yung aroma ng banana leaves na distinct sa bibinka baked in traditional way, oven po kasi ginamit ko.
If only I had an idea what the banana leaf smell like to determine achieving an additive to the batter!
I will google it and see if I can find a susbstitute. If successful.. I will return to inform you. 🤗
I like mortar and pastry, mostly ang recipe dito tinatry ko. But i dont recommend this recipe. Hindi maganda kinalabasan. Mapait at tsaka eggy po masyado yung amoy.
