    We don’t have a well stocked pantry. We have very limited space for food storage, very much a paycheck to paycheck budget.. so my pantry challenge to myself was to meal plan and stick to the list. I have so many dreams of food storage and such, I told myself if I could start to be more mindful and intentional with what I do have, I would be able to better understand our needs and what to actually store. With just the two of us, and our tastes being quite varied (I’d live on potatoes if my body would allow it!) This was a really good process of discovery.. I discovered my food budget didn’t need to be so big.. so hopefully I’ll be able to divert the “excess” to that storage now.

    Kelsey! Don’t buy tomato paste. Put your freeze dryer to use for you. Make tomato powder. I’ve not bought paste since I got my FDer!

    My son has had to deal with ADHD, ODD, and Autism traits which made him a very picky eater for many years. (Cheeseburgers, pizza, cheeseburgers, pizza over and over) I had to give up on my ideal of him eating lots of fresh fruit and veggies. He's not underweight, or overweight, he's not the tallest, or the shortest in class. Since I did not cater to him and make separate meals he's come out of the strict pickiness. A few months ago he asked if we could try Indian Curry. I was blown away! Just saying kids can be fine without fresh produce for a season (or years in my son's case). FYI: I'm writing not to criticize, but because I anguished over my son's eating for a couple years; I thought it was setting him up to be a tiny adult with rickets and cancer. But I had to give that worry to God and keep trying and it seems to have paid off...

      My son has ADHD and is Autistic. I hear you when it comes to food. I found out that they prefer shop bought meals as they are reliable with flavours as they never change where as when I cook it can change. I dread the situation where SHTF

      @@hetheringtonfamily8798 keep trying. My "rule" was as soon as he was old enough to make a PB&j he had to fend for himself if he didn't like what I made. At about 10 he looked up a video on how to make eggs and did that. A while later he looked up a video on French toast... This has also given him independence and transferred responsibilities which some experts say is important for possible independent adulthood too 💗💗

    I have started placing chicken thighs or chicken breasts in plastic freezer bags along with various types of marinades. So easy to pull them out of the freezer and a they are thawing, they are marinating! Then they can be grilled or baked or stir-fried. I also started making favorite casserole type dishes (beef spaghetti bake with cheese, or German Spatzle with butter and cheese, etc) in smaller freezer/oven safe dishes and then just pulling them out and popping them into my oven as it starts pre-heating, and soon I've got a meal ready. I also put these things into very small (1/2 cup or so) freezer/oven safe containers for my 91 yr old mother-in-law who needs simple foods in portions she can easily cook and eat. She is doing much better now because of this option.

    I often use a jar of jam or jelly in a pie with the filling, or in a fruit crisp, by using less sweetening. Uses up last yearseason stock.

      That's an idea I never thought of. I just thought of an idea to use the many jars of apple jelly that I've made through the years that my family no longer likes and use it for braising my roasts or ham.I also use it for pancake syrup.

      I will use jam or jellys in cookies, muffins, or cupcakes. Kids love it. Just need to cut back on the sugars in the recipe.

    I have been making extra when I prepare what we eat. When I can't cook, I have the meal prepared. It's going to get busy in a few weeks and going for take out is too expensive.

    I canned up a bunch of chicken pot pie filling and we just use it as a soup. It was a big hit with my family. I just do a roux, some milk and the jar and it makes a super easy delicious soup. I also freeze so much bread so that’s always available even if I go a few weeks without baking.

    I was going to say, if there are items you don't use or have more then enough of, you could always take them to church and let folks know you have some food available, I do this with some food items, we have several elderly folks that no longer can food and were more then happy to take them off my hands, I left a box in the coat room for the jars, and then the empty jars were also returned. Just a thought for any excess that you didn't really need or want to go into the next year. I have made it an yearly thing now.

    I created what I thought were very reasonable but tight boundaries for my challenge… and learned my boundaries need to be way tighter if I want to actually eat through a ton of my canning. It’s really neat to see what others ate through though because it gives you a better understanding of what to expect yourself. We ate through a noticeable amount but less than I thought we would.

    I loved watching your recap from the pantry challenge. I had the go through of what to plant and can afterward.... I agree about canning ready meals! What I need to do more of is canning meat.. It was always wonderful to do for quick meals and kept meat safe from breaks in electricity. It became the topic of discussion at work yesterday... nurses!

    When it comes to the pantry challenge, I start trays with lettuce and greens in early December, and once the challenge starts there are plenty of fresh raw greens to eat. All you need to do it is a grow light and a place indoors to do it. I also grow tree collards which produce greens all year round.
    Then my kids were young, I would plant in clear plastic, so they could see the roots develop on the plant and want them grow. It’s a unique way to teach small kids what’s going on with the plants under the soil. This was one of our homeschooling projects.
    If you want a good sauce without tomatoes, I can recommend making No-Mato sauce, it looks and taste a lot like regular spaghetti sauce, but contains no tomatoes. It’s a freezer sauce, and taste amazing.
    When I have plenty of pickles, and we only want to grow them for eaten, I usually grow the mini English cucumber types. My kids love going out and picking them just to snack on. Last year I got 400 out of 6 plants. Also, they freeze dry very very well.

      The “mini English cucumbers”. Is that a variety of English cucumber or are the cucumbers picked early?

      @@katescaringcorner6765 it’s a variety of cucumbers. They naturally grow to about half the size of regular English cucumbers.

    You might want to check out Acre Homestead. Becky does amazing freezer meals and quick dinner ideas. She also makes dinners for other families quite often. She cans a ton of stuff too. She does organic as well. I hope this helps you. I love your channel and all you do ❤❤❤

      I love acre homestead channel. Becky videos are how I found your channel and am an avid subscriber of both. Frugal fit mom also does a ton of freezer meal videos that are approachable. She isn't a homesteader but she definitely helps financial advice and freezer meals and meal ideas using limited ingredients and/or budget.

    Just checking in. I enjoy string beans with meatloaf. Just when it’s almost done I add the string beans into the dish and let it finish cooking in the dish. So yummy. Don’t apologize for your struggles. Trust me, we all have them. Thanks for the video. Love your channel. ❤

    Also refried beans are super easy to make. I dont love this method for having beans whole in general, but for refried beans it works great: no soak method and add seasoning. Becky from acre homestead did this a few years ago on her channel when it was new. She has since changed her method, but this is where i learned the ratios of dry beans to water that work well for this method. If you pack them without seasoning you can season them when you take them out of the can to saute up in the fry pan for a super flavorful bean side. Or you can add seasonings in with the beans before you pressure can. Refried beans are traditionally onion powder and chili powder but you can season them with taco seasoning or whatever flavor your family prefers.
    As for tomato paste ... i see a lot of people say they always buy it and then freeze extra if there is some left when you open a can for a recipe. But, i keep tomato powder on hand and just reconstitute it when i need paste. It is shelf stable and no waste. Tomato powder can be made in dehydrator or freeze dryer (if you want a fresher flavor go with freeze dried but for a richer flavor dehydrate)...take your skins and seeds from your mill when making sauce and dry it and put it in the blender or spice grinder. Or azure standard sells it for a decent price.

    Ruthann Zimmerman adds 50-100mg of zinc to each green bean before canning and it helps keep the color. I’ve done it and it’s amazing!

      It does work, however, I don’t think I’ll do it again. For one, it left some white residue in the jar, plus, the color is kind of unnnerving when you’re used to a more olive color of canned green beans.

    loved learning how you determined what you need more of and less of and especially how you learned so much about you and your family by doing this challenge. Can't wait to see more videos on canning ready to go meals. I bet you learned way more than if you had only done one month. Hope you feel stronger quickly. Gardens do bring invigorating hope, don't they! Yea for spring.

    You did a great job with this challenge. I very much enjoyed stopping in while you were preparing &/or baking/ cooking. I especially admired how easily you baked breads etc. I can make breads but haven’t been doing that. I don’t have a freeze drier although we’ve thought about getting one.
    I use to facilitate a ministry of a weekly meal several times per month to the local unsheltered population by planning, shopping, preparing and cooking for 150- 200 . Of course, I had wonderful helpers to accomplish this. Due to a serious health event, I’m not able to be personally involved in this any longer. I miss everything about this ministry.
    We’re a retired couple of 2. So.. our needs and wants are quite different from your family’s.
    Keep up the wonderful work you are doing to provide well for your 2 littles and your husband. I look forward to seeing your gardening 🧑‍🌾 projects.

    I lost focus a couple weeks into January and just feel back on tried and true meals. I had intended on pulling out stuff like the beef tongue and finally push myself to use the cuts we don't typically eat. That said, I was also not doing a ton of grocery shopping and yet you would never know by the dinners we ate so at least the freezers and pantry served us well even if I wasn't using the neglected stuff. I went into the challenge with good intentions but then I got in a funk and I'm just thankful spring is almost here. I'm also mad at myself for not getting the broth made and all the bones out of the freezer but hopefully I can still get that done before the garden work picks up and the next batch of chicks are ordered. No one in my family hunts, but I managed to score 40lb of venison from a processor that had unclaimed boxes. Now I need to figure out how to cook with it! Do you have any vids on cooking backstrap??? We have a commercial freezer that I started organizing before I lost motivation and I really need to get my butt in gear to finish that as I know it will refocus me to use the older stuff. We are cutting back our tomato and pepper growing this season too, and up'ing the carrot production... well, I have a plan to try to grow carrot greens without actually growing carrots (for the bunnies) by making the soil super nitrogen rich. I just put a 4'x4'x6' grow tent in the bunny room to grow more fodder for them without taking space from the garden. I'll grow kale, arugula, lettuces, carrot greens, collards, cilantro and parsley for them. At least I'm gonna try. Tent and lights are installed but lacking motivation to start seeds. Winter always kicks my butt emotionally, despite taking a ton of Vit D. Oh, and the reason I even started to type a comment was to tell you that Azure's organic A2/A2 milk powder is awesome... and so much easier than freeze drying yourself. I know you are trying to find ways to use your time more efficiently and this would keep your freeze dryer (and freezer space for pre-freezing) more open for garden harvests. You know you can count on Azure quality too. Just a thought! The things I plan on freeze drying more of this year is cheese and cooked meats. I hope I am VERY wrong, but I think its super important this year to be as prepared as possible. Looking forward to seeing your freezer meal production!

    I love that you see the value in the canned carrots. Had a feeling that might happen as you were finding ways to utilize them. I do the same thing to my husband that you do with the kids, because he isn't a veggie lover. If I can "hide" them, he won't hesitate to eat what I make. He actually ate kale greens the other day, like I normally prepare spinach, and I was completely surprised! I put turnip stems in a casserole and he devoured it. Saved himself a bowl of leftovers in the freezer for a meal for later.

    So excited for your freezer meal ideas. It’s just my husband & I, and I’m also trying to do as much carnivore as possible, but it’s hard when my husband isn’t doing it also. It will be so nice & convenient to have meals I can quickly prepare for him. Thanks for all that you do!

    First I would like to congratulate you on completing the challenge. As to your canned items in your pantry. All can be used, as you have stated. Since you are opening a new chapter of responsibility with your church, you most definately can utilize everything while going about your new responsibilities, either in recipes or just as a jar for their pantry that they can use when needed.
    As for the carrots, try another variety of carrots, such as kyoto. It is very sweet and should can well. I will be trying it this year. I, like you, prefer fresh, but canned works in recipes. As for your pickles, try pickling zucchini and watermelon rind. They both work in a similar way and have a similar taste profile. Canned meats and meals in a jar are always a great choice.

      We pickled Zuch last year and loved it. Seems they stay crunchy longer than cucumbers. I'll try the watermelon rind this year. And thanks for the Kyoto carrot recommendation. I'll look for those too.

    Last Easter my Kroger had pineapple on sale 88 cents with a limit of 5. So I bought 5 and used one fresh. I canned the other 4. Easy and I think delicious. You have such a good heart and your meal ministry will bless many.

    I use alot of carrots, stews soups, honey glazed, I add to the pets foods n more. I too am cutting back on the bread n butters. Here I need to double my beets, we eat alot n hubby snacks on them.

    A way that I have convenience foods in my canning pantry is to make huge pots of soups, chilis, etc, and can what we don't eat and they are ready to heat and eat. I also can dried beans that I can just season when I heat them and they make an easy dinner too.

    I think you did a great job using your pantry. Every mother deserves to give themselves more grace. The older the kids get the less time you will have. It is perfectly ok to have some store bought freezer convenience meals. It will preserve your sanity.

    Perhaps, you could try a different method of canning those carrots a little differently that will make them taste better- just do some research an see if a little of this or a little of that will make the taste better. Try adding herbs or fruit. You do you. Great video and loved your summary on your pantry challenge.

    I'm new to your channel, and enjoyed seeing your lovely pantry! I've grown the Rampicante squash in the past as well, and I also remember being disappointed in it. I've since grown the Tahitian Melon squash (which I got from Baker Creek), and found it similar in shape and productivity, but with the flavor and texture of a butternut. Also, it stores well, as I still have several firm squash still at the beginning of March. I would recommend it :)

    How dare you not have proper lighting in your basement!😂🤣 Just kidding ❤. I like watching these challenges so that I know kinda what to expect for my future as well as the great meal ideas you have. My body doesn't handle dairy well so I don't really have to worry as much about that except for cheese that I love, but my goal is to get to the point where I only need one trip to the store per year for the things I can't grow like coffee, sugar, and flour and things like that and your videos are always full of useful information.

    I made fermented beets for the first time in Jan and I loved them! I also pickled some for salads. I think you'll like the fermented on your tummy too! I used the recipes from Cleanfoodliving - she does all things fermented and explains things so nicely.

    I pickle my carrots. When its time to use them, drain the brine off and soak them in cold water for a couple of hours.

    I love that you’ve changed your stance on canning carrots. I think that’s one of the beautiful things about the pantry challenge - finding creative new uses for things and realizing they actually DO fit into your cooking, just not in the slot you were trying to fit them in.
    What about freeze drying some carrots for soups, stews, pot pie… in case you don’t have fresh ones on hand and want to make something in particular? I don’t remember if you’ve already tried that and weren’t a fan.
    Beets might work, sparingly lol, in smoothies or fruit leather?

    As for all the preserving I have the same mindset -“prepared for life events” I grow WAY too many peppers, cucumbers and green beans and made too many pickles🤪. I’ve loved having canned green chilis but realized I buy roasted red peppers🤷‍♀️🤦🏻‍♀️. So that’s a goal to do this summer! I’ve been over producing and canning knowing I won’t have a full garden this year as hubs is retiring and we are planning to move May/June
    Lots of amazing canning recipes for convenience meals from Jeni Gough-@Jenis scratch made kitchen-saved me when I was really sick a couple times in 2021.

    My staples for the pantry that i never want to be without: tomato sauce, pizza sauce, mirapoix (canned in broth and canned in water), potatoes, broth, and meat. Basically any soup or hot dish is doable at any moment for quick meals. You can also make sandwiches with meat (raw packing chicken and beef) or drain the water out of mirapoix / any veggie mix really and saute it up or add to a hot dish or air fry. Freeze drying veggies is also great for ready meals and ive heard it is great for grains like oats, noodles, and rice. I do not have a freeze dryer so i cant speak fully about that but i have heard good things with them. Especially things that you dont love canned like carrots and celery, these can be reconstituted for hot dishes and soups and baking. Not sure about sautee, air fry, or roasting.

    Your new ministry sounds commendable. I would encourage you to speak to your local health department to see if you/your church need to comply with any public health guidelines. Some states are more strict than others.

    I like the intentional thing! 😂 It sounds like I'm like you are and make things because they sound good at the time. 3 years later, nobody touches the jars! Haha. I'm holding out with tho0se jars of food.... if that time comes and were eating out of my jars, we'll be happy there's some variety. I call them "bonuses". 😊

    I cant remember if you dehydrate or not. My girls love fresh carrots but they have phases so I do not grow them. However, if they don't eat them in less than 3 days, I scrub them, peel and save the outer peels for either feeding my numerous worm bins or a freezer bag of scraps for soups. I then blanch them (to soften them slightly) and dehydrate them to make veggie powders that I put in EVERYTHING I make. In fact, that is what I do with any fresh veggie after day 3 to make sure they are still optimum nutrient-rich. DO NOT freeze dry carrots. lol-its bad. I hear. I've also dehydrated any fruits or veggies that I have canned after 1 year. I figure if they haven't been used by then, they need to be used in a powder.

    I actually experimented planting my long-sprout potatoes with the sprout up, and it worked and was just as successful as my potatoes planted normally. With the rampicante squash…totally agree. I planted two plants and it is soo overwhelming. I didn’t let mine turn orange and just sliced them super thin and cooked them in various ways last summer. I like the flavor of them while they’re green! I also used them to make mock pineapple.

    Fantastic wrap up of the challenge! While y'all were doing your challenge we were doing our own "operation: eat from the freezer" challenge. My goal the next few months is to cycle through our freezers....eating & canning. In our current national state we decided it was wise to rely less on the luxury of having electricity.

    I learned a lot from you. The recipes you shared on this challenge were so good looking, I made some of them which were as good as they looked. I too have a hard time eating tomatoes, but I found that the acidity of our yellow cherry tomatoes was low and I could eat them. I canned red salsa for my husband and yellow salsa for me. I’m doing keto right now and I feel great. I hope you are able to find your trigger foods. It took me awhile to realize what bothered me.     I buy organic single origin green coffee beans and roast them at home. I pay less than $8 a pound for beautiful coffee. It would cost me $14-$16 a pound pre roasted. The savings on beans quickly paid for the $115 roaster I bought online. Plus it’s so much fun to roast. I know you want to take some of the pressure off yourself - trust me, I’ve been trying to do the same for myself - this is just information I’m putting out there because it saves a LOT of money and requires very little effort.

    Do you have Angie Schneider’s book, pressure canning for beginners and beyond? She has wonderful canning recipes for meals in a jar plus recipes for many other canned goods that are in her book. I love it. It’s one a go to again and again when canning meals.

    I've never tried the pantry challenge before, but I'd be short when it comes to a few things like lettuces and maybe fresh fruit. BUT - this would be a good one to try in future.

    I have canned Chicken Tortilla Soup and Veggie Soup. To the Veggie Soup, I just fry up some hamburger or use leftover roast beef. I’ve also canned some Chicken Pot Pie, which was ok, but not my favorite. It had onions, carrots and celery, then I add peas when I cook it. It’s so nice to have meals on hand in the winter!
    As far as growing the squash, I am going to try growing mine up a trellis, I have had so much trouble with squash bugs and have heard that will help.
    I quit buying mandarin oranges because I can’t find any that are not produced in China, and I don’t trust their growing practices. I did can them one year for fun, dissolving the membranes first.
    I think I have so much fun canning new things(plus having excess in the garden to use up), that I end up canning things we never end up using. It can be a hobby as well as a skill to help the family, but it’s a good idea to just give the produce away instead of canning things we won’t use.

    With the carrots, have you tried pureeing them and adding them to a big batch of tomato sauce or chili? I love to do that because not only does it add nutrients, but it also adds sweetness to the tomatoes. Just a suggestion.

    I did do the challenge this year and found I enjoyed it more than I expected too. I allowed a small budget for fresh produce and dairy which I didn’t even use weekly which surprised me. Like you, I didn’t want to use up everything so a lot of focus went into using purchased pantry items whether from the grocery store or Azure. It was helpful to eliminate items that I no longer want to buy but also didn’t want to waste. I also learned a lot about what my husband really enjoyed. Specifically, he was often asking for applesauce. We’ve nearly cleared the shelf of that so I definitely know I need to can more this year! I am also longing to get “meals” together. Whether in a jar or the freezer I really want to have things ready to go. I’ve already started with this in order to be ready for garden season. I love to be outside with my hands in the dirt too. However, because of some health issues it means that on most days I’m physically so drained that it leaves nothing left to think about making a meal. If I have prepared some meals in advance then it will be much easier to keep up on that. One thing I want to be able to make myself and then can up, is tomato soup. We love tomato soup and eat it often. I’ve never made it though and I’m hoping I can find a recipe we like and I’m able to can it. The one I buy is so expensive so I really want to make something we will love to eat.

      My family likes tomato soup also. I use a pint or a quart of my tomato purée that I can. I heat it up add a tablespoon of sugar to pints salt and pepper. Add about a cup of milk with 1 tablespoon of cornstarch mixed in. Heat until almost boiling. That’s the way they like it.

      Our neighbors had success storing their carrots in sand, packed in large Rubbermaid tubs. They stored the tubs in their heated garage, temp set at about 50F. and the carrots stayed firm until early spring.

      I did and won't do it again. Loved the canned carrots. I find the vegetables FD don't hydrate well. I prefer dehydrated. FD carrots will fade in a few months when stored in a jar, in a dark pantry.

      Yep! Not celiac but definitely gluten sensitive. It seems the overall inflammation is contributing to that and I should be able to have gluten(in moderation) once my gut has had a chance to heal!
