She said she will never forget the expression on his face and as he was leaving, he shook his head like he thought mom lost her mind and then bowed his head and then blessed the house.

Not always available, especially lately. The USDA canning book says Splenda is the only artificial sweetener they recommend for pressure canning because when heated to high temps, it does not change its properties. I am just thrilled with this recipe! I also use your mustard recipe regularly. Love it!

I looked up the Ball recipe and it makes 7 pints. Ummmm... NOT for me, lol. Plus, their recipes don't always match up to my taste buds. Your combination looks really good, with that hint of cloves. I have made sugar free ketchup for years for my husband and diabetic neighbors and friends. Chef John, Food Wishes; great recipe. I call it “Meinz”. Where does one get monk fruit? I have never seen it in any form where I live. Does it not contain natural sugar; I.e., fructose? I use Splenda in what I make and it is excellent. Last batch some went into a squeeze bottle and the rest was dehydrated into leather to be reconstituted as desired.
If you find that you get chunks of crystalized monk fruit after storing in the fridge, you can switch to using allulose, which doesn't suffer from crystallization problems, or sub some of the monk fruit with a sweetener like Sucralose or stevia. I found a study that says a solution of 33g of erythritol (the bulking ingredient in monk fruit) per 100g of water can be stored at refrigerator temps without crystallization, and that concentration has worked well for me in the past!
I am getting ready to start my own channel and ketchup is one of the first videos I am doing in my "Cheap and Easy" series. Why buy it when we can make it cheaper, know whats in it, get more, and taste better! Like the recipe!

I just went to Walmart there was a bunch of quart jars not in package 30 of them they gave them to me for $14 for all God is so good

We aren't big ketchup eaters here (sometimes we don't even have a bottle in the house) but I love having a recipe for it now!
