  • Homemade Ketchup without sugar
    Today I'm going to show you how to make homemade ketchup from scratch.
    This sugar-free ketchup is made with fresh tomatoes, onions and apple.
    I made this ketchup with fresh tomatoes, but you can make it canned tomatoes or tomato paste (but you'll need a bit of sweetener in that case).

    Preparation:
    In a heavy bottomed pan, add the tomatoes, water, diced onions and chopped apple. Bring to a boil, cover and cook over low heat for 40 minutes.
    Blend with a hand blender and push through the sieve to remove seeds and tomato skin.
    Stir in the apple cider vinegar, tomato paste, mustard and salt to the taste.

    I just made this ketchup and it turned out great! I used extra tomato paste because hubby likes his ketchup thick. A little Italian seasoning, curry powder, and a dash of nutritional yeast for taste.. it's a hit. Thank you!

    I made ketchup by accident while working in a restaurant years ago. I would save vegetable trimmings to throw in stock pots. I had a lot accumulated one time, so I decided to make a veggie stock. After simmering tomatoes, celery, onion, parsley, etc. I strained it, then, just to see what would happen, I put the remainder through a food mill, and there it was! Ketchup! and so flavorful, too...

      You mean after he puréed an apple and separated all the sugar from the fiber? lol.
      Ketchup is one of the least problematic condiments in the whole isle and incredibly cheap. They also sell actually sugar free versions.
      The only healthier condiment would be mustard. I would actually argue hot sauce is less healthy than ketchup. Hot sauce has about 150-200mg sodium per TEASPOON. A table spoon of ketchup is like 150. But a tablespoon of ketchup is only 15-20 calories. So you can really have as much as you want within reason and it’s going to be less than even one tablespoon of an oil/Mayo based condiment. Ranch is about 80-100 calories per tablespoon.
      Unless your metabolism is just completely fucked by some medical issue, there’s no reason to avoid ketchup, mustard or hot sauce.
      If anything a quarter cup of Franks over some chicken wings, is probably the least healthy, just from the sheer amount of salt. (~1500mg just in the sauce)

    For canned diced tomatoes add a tea spoon of backing soda and let it stay for about a half hour (make sure to mix well the baking soda). This will reduce the acidity.

    • @davidsmith7208
      @davidsmith7208 3 місяці тому

      Not bad advice, but I've overdone baking soda by following a strict amount guideline in the past. I've found it best to save that step for the end, and just add and stir a pinch at a time, to taste. Too little acid and your sauce will fall flat on its face, and it really doesn't taste good. Conversely, if the acidity isn't quite enough, white, or cider vinegar, added the same way can help the balance.

    • @skeleton1765
      @skeleton1765 2 місяці тому

      I’m a little bit ignorant on diabetes, but are you really that adverse to sugar? I have heart problems so I usually avoid very salty foods. I usually go for mustard but sometimes ketchup. But that amount of sugar was the WHOLE bottle. A quarter cup of ketchup is only 60-80 calories.
      1. Even if that’s all those calories are coming from sugar that’s not a lot of sugar.
      2. A quarter cup of ketchup is a lot of ketchup.
      This also isn’t sugar free. The apple was blended and the sugar was separated from its fiber.

      Back when I occasionally ate a burger and fries in a casual place by me, I'd get three Heinz ketchup packets with the order ,and it added up to three or so tablespoons. Not a lot to me but I totally understand the need to know one's carb intake.

      Ketchup isn’t even bad though. One tbsp is 15-20 calories. You’d have to eat 5 tbsp to get 100 calories. The sugar is not enough to matter unless you have some sort of inability to metabolize sugar.

    • @msr1116
      @msr1116 2 місяці тому

      Yes, it does look like a lot but the same can be said for soy or Worcestershire sauce's salt content or the sugar amount in fruit jams or chutney. These
      and similar products were meant to be used very sparingly or as an occasional condiment. Ketchup is fine but I never consume enough of it to warrant buying or making it. The recipe is good though, I'm not knocking it.

I used to buy no salt and no sugar ketchup, but it got more expensive and harder to find. So I definitely will give this a try when we finish the old batch I just made. Thank you again for sharing your talent and creativity with your many followers. You are definitely a ⭐⭐⭐⭐⭐UA-cam chef! *For homemade ketchup: 1 cup tomato paste 1 tbsp honey 2 tbsp apple cider vinegar 1 tsp mustard 1/2 tsp garlic powder 1/4 tsp salt 1/4 tsp black pepper 1 cup water

      @HowToCookSmarter  Рік тому +4

      That's great Lauren, I'm glad you already make your own ketchup, it's so much better when you can adjust it to your taste, for me it's making it less sweet in the first place, but also adding different spices if you feel adventurous, and sure good organic low in sugar ketchup is usually more than double the price of regular ones. Thanks for sharing this recipe here in the comments and I'm also giving you a huge 5 stars for all of your amazing support! Have a great day!

    Although I've grown to love the Heinz brand of ketchup, like you say my buddy, it has too much sugar, so thanks to you I'll be trying your recipe out, thanks to a Korean lady here on UA-cam we make and enjoy a Korean Street Toast and at the end we put ketchup and mayo on top of the vegetable pancakes, this would be a special touch using this homemade ketchup, but will be checking out your baked oatmeal? Yes I understood correctly, not just for breakfast but now oatmeal for dinner!😋👍

    Thank you for pointing this out about ketchup. I grew up eating a lot of ketchup. I was horrified, when l learned all the sugar in it. I stopped buying it.

    This makes my mouth water! But (2:44) you find what flour? ULLflour? Is this possibly a USA-wide product so I (in England) won't have heard of it?

    Ate the stuff left behind in the sieve too, on bread, while preparing the ketchup. Not bad at all.

    My 10 year old loves to eat ketchup with everything. Although he is very healthy and we eat home cooked Indian food most of the time I was concerned because stored bought ketchup has so much preservatives and sugar. Your recipe is very simple and I particularly liked the idea of using apples for sweetness. Thank you for sharing a healthier and simpler ketchup recipe

    Could I blend the pan ingredients before the cook? Seems like it would cook faster but may affect flavor slightly ?

    Does this method may also work with a manual food mill, instead of an immersion blender and a strainer?

    Nice one 👍 I make my own tomato ketchup too. I usually use pepper red fresh tomatoes 🍅, one red bell pepper, one apple, one very small beetroot, some apple cider vinegar and salt. Sometimes I add carrot 🥕 or a table spoon of honey. 👍👍👍

    Thanx for the recipe. Could you make a totally raw chocolate oatmeal cookie recipe using dates and peanut butter. Dates are rich and full of fibre, but I don't know how to incorporate them in such a recipe as a sole sweetener.
