I love canning meat! I did mine in bouillon last year. This year, no salt, just water! Last year's was delicious, but I think I would prefer less sodium, as using it in recipes seems to make it too salty. Nice refresher video! I'm wishing Happy Spring to all!

I started canning in 1975. I never can with salt in anything I'm canning. The Home Economist at my local County Extension Office or The Ball Canning Book said it is not necessary to use salt. It is only for flavor. There's not enough salt for Preservation of the product. If you choose to use salt in your canning DO NOT USE IODINENIZE SALT.

Since I have to import everything from the US, which makes it 2 and a half times as expensive, this will hopefully lengthen the life of my rings! Thank you soo much!

I was taught to cool the liquid, skim most the fat off and the remaining juices/collagen were used instead of water. Like you said, the flavor is in the fat so I make sure there is some in there. I have never had a problem. Yay!

Have 2015 chicken in pints. Will boil it for 10 minutes before using it. That will change the texture but can’t risk it. All the seals are in great shape, visually it’s like the day it was canned. Love canning ground beef, in a shtf, it will be welcome in tacos. Got MASA to make tortillas and hope it doesn’t come to that but it will be a treat.

I did it! I canned ground beef and pork for the first time. Now, I need to open one and use it to see if the texture will be okay for our family. No need to can if we don't want to eat it. I canned 4 pints of beef/pork and 4 pints of raw chicken legs. The chicken looks terrible but I think mostly because I didn't add any liquid with the legs. Again we need to try a jar and see if the texture is okay for our family. I am really hoping it is acceptable because I am looking for shelf stable way to keep meat incase of a power outage and we loose our freezer for an extended period of time. Thank you so much Leisa for sharing your canning knowledge with us!

    • @lmcburney
      @lmcburney 2 роки тому +1

The canned ground beef/pork had a good texture. I used it in a homemade hamburger helper type skillet meal. It was good enough that I would make tacos with that meat and be fine. Next we will try the chicken. Honestly, it looks terrible with dark bones and greasy liquid. I think that I will debone it and use it over rice or noodles.

Have been wondering how to protect my pantry if marauding bands of starving zombies kick in my front door. I have been terribly worried about this but hearing you talk about how picky people can be the answer came to me in a flash! All I have to do is label each jar with a failure, like "Beef innards with slime" or "over cooked ground beef, too gooey for tacos". And so on. I could make my own "Letter from County fair
Canning products judging panel: Please do not ever submit ANY canned goods in the future. The judges unanimously voted to refuse to sample any thing you submit--including water" I can hang that up on the shelves to scare the thieves off...
    Wish me luck!

I love having it canned. I didn’t can it with liquid because that’s not the way I saw earlier. Next time I will try it with water and see which way I like best. To make a quick meal I just get a jar of hamburger, jar of carrots, jar of potatoes and then I get a can of tomato soup. So quick! I don’t add salt either. Did one time when I canned chicken soup and it was too much! Thankfully a friend told me to add a few potatoes and then it wasn’t so salty tasting.

Thank you so much for your video.
Here we go, it's Sunday and the store opens at 12pm and I just got back with 10 packs of discount hamburger, there's seven regular ground (fatty) and three lean.
Not that it matters since I'll be throwing it all together.
I was into the habit of canning hamburger in the form of my meatballs but I have a whack of those so it's your way today.
I may have of told you about my raw packed hamburger experience?
I was rushed with too many projects when the hamburger fell into my lap so right into mason jars raw and pressure canned.
    OK?
I opened a jar only to discover that not only did it look like dog food, but it smelled like it too. But only the first fresh whiff. Then the smell slowly died, ... Like I thought I would.
Turned out tasty with some Taco spice, onions and green pepper. Worked good in spaghetti sauce too.
    But still, ... AGGHHH!!!!
The dog food thing got to me. lol
I'll be using a little salt in mine this time in the form of beef broth. I find the hamburger I cook, even when fresh, can't be hurt with a little beef bouillon, and in this case, broth.
    So have a great one!

I bought a canner with instructions that said do not add vinegar to water. I missed that in the instructions and it ruined the rocker weight. The wire corroded and I can't get the build up out off the inside. I had to order new weights. Skipping the vinegar hasn't changed the cloudiness either.

I love your videos! Is it normal to hear popping from the jars after you're done with the whole canning process?

Thank you for that. I actually prefer the texture of pressure canned ground beef.

I have pressure canned ground beef before and it had a metallic tang to it after canned. I have only had this problem with ground meat. What am I doing wrong? I would so love to have jars of ground beef on my shelf. I can beef chunks, pork, turkey and chicken without any problems. Any suggestions?
