These family friendly Salmon Tenders are a quick and easy mid-week recipe. Perfectly seasoned with a crispy coating and delicious served with a tangy and lightly spiced dipping sauce. They are also gluten-free and dairy-free. Hope you enjoy this Salmon recipe.
Ingredients
1 1/2 lb skinless salmon
2 tbsps. corn starch
1/3 Louisiana sauce
3/4 cup all purpose flour
2 tbsps. cajun seasoning
1 tbsp. old bay
1 tsp garlic powder
1/4 tsp ground black pepper
2 large eggs
Sauce
2 tbsps. mayo
1 tbsp dijon mustard
1 tbsp Louisiana hot sauce
cooking time 4-5 minutes on 350 degrees

i have learned that rubbing any meat or seafood in mayo (yes mayo) vs eggs (which often fall off) and then seasoning the meat, and after that smooshing it in a mixture of corn starch (a dry powder type substance) and panko bread crumbs, letting it sit for a few hours or even a day in the fridge, (which makes it stick to it way better) gives it the best flavor vs all if the seasons in the breading but both ways are great.

So I just made these. I have never had a good track record with fish since I am not a big fan and not experienced. I did this recipe using gf flour (I have gluten intolerance) it came out ok. I think I have to double batter with gf flour since they look less crispy but I like the taste of these a lot better than my last attempt. Thanks!!!
