      - Dread try Yamasa brand low sodium soy sauce. I got hooked on it when I worked in an asian fusion restaurant.
      The packets you get with chinese food isn't soy sauce at all, but colored salty water and misc chemicals.

      I've tried some expensive soy sauce from Japan. What I can observe is that that they have a more wholesome and highly in depth taste than conventional commercialised soy sauce brands

      xXSmokeYou420Xx not sure, but not only animal hair but also waste cotton are used to make the key ingredient “amino acid” in mixing modern soy sauce, which is technically ok to eat if the amino acid extract is pure, just a little bit disgusting that’s all...

    It’s great to see even in this greedy world , who wants to maximise sales and minimise production costs there are people like Yamamoto san who gives importance to the authencity of soya sauce , and there are many other people/small scale manufacturer who still do that , hats off to all of them :)

      Queasy because commercial soy sauce, depending on the formulation, can be an acidic or plain salty flavor which doesn't go well with dishes that already have a strong flavor due to the other ingredients.
      Imagine having a sensitive stomach, and you're eating a dish that has a soy sauce base for its soup, and the soy sauce formulation ph level is almost or is acidic, queasy is definitely the feeling.

      Yeah, makes sense. Generic soy sauce does have a sharp salt flavor most of the time.
      I was really just checking to make sure you weren't one of the people trying to claim that "traditional" soy sauce is healthier because it doesn't have gluten or some such nonsense like that, ignoring that it has all of the same general ingredients.

    I've had the same bottle of soy sauce in my fridge for over 20 years... When I order Chinese food they usually supply me with enough packages for the meal... A few months ago they forgot to include the sauce so I used mine... still tastes fresh/good after 20+ yrs.

      +Be Frank soy sauce has such a high sodium content that bacteria can't develop so it never goes bad the same thing for honey and maple syrup but for the sugar content.

    I bought it off of Amazon-let me tell you, it’s worth every penny. Thick, rich, savory, leaving a subtle sweet taste behind. I will never go back to Kikkoman overly processed/bitter chemicalatasting soy sauce. Soy sauce is a staple in my culture! I never want to go back! I’m serious.

    I visited this island for a homestay program in 2014 and got a tour of the facilities. Dont remember if this was also the guy who spoke to us, but I can still remember the smell of the place! The whole island is beautiful!

    I bought a bottle of this stuff! It's the same basic flavor as soy sauce, but it has notes of other flavors in it the way a good alcoholic drink does. It's more complex layered. It's easier to notice if you taste it side-by-side with another.

    Fermentation and flavoring via container is also the trick used to turn traditional moonshine or "white lightning", ie corn based alcohol, into bourbon! It's very specific to the cask you use, how it's charred and making sure it spends ten years getting that perfect color!

    I bought the most fancy version of his soy sauce: CRANE label! I haven’t try the Jasmine label which is the least expensive one but the Crane version tasted phenomenal! Very complex layer of umami flavor! I will definitely buy it again when my bottle runs out!

    It is traditional manufacturing process like these that makes food so valuable and tastier. I love the Japanese traditions. They are really healthier. I wished I could only eat fresh, traditional, artisan and organic foods.

    I bought some of this, along with their ponzu and dashi soy sauce variant, and it is a revelation of flavor. Light years above anything you've had before.
    Go out and buy some right now. Its $20 a bottle, but 100% worth every penny.

    I have tried soy sauces from Hong Kong, Taiwan, Japan and mainland China. And i can say Japan's quality soy sauces are the best. Not too salty, full of depth and flavour, sweet, and with a wine-like taste and aroma. Great for any type of cooking.

      The fermented soy sauce is good to health BUT in nowdays almost all soy sauce outside Japan is not fermented , it is just Saturated vegetable fat heated and is Carcinogenic.

    A very charming story about keeping the traditional art of making Soy sauce. I thought that Japan over its years of development was be able to preserve a lot of thing in its own way, but seem like 99% of Japanese doesn’t do that.
    In Vietnam the traditional method of making fish sauce is also replace by industrial method that makes nothing but “a liquid combined of salt, water and artificial chemical things”. I hope we Vietnamese can learn from the Japanese to preserve what is really precious to our next generations.

    I enjoyed the video but I feel obliged to point out an error that someone else may have already pointed out. Those are not bamboo barrels; the barrels are bound with bamboo but are made from another wood (cedar is what it looks like to me).

      that's very true its the ties around it that are bamboo and the barrel is (after googling the Japanese character), fir. This is explained in a different video that this company did with Business Insider I think. The character for the wood used is 杉. I'm betting it's pretty important the type of wood they use too.

    Its cedar barrels.. not bamboo barrels. Its only the weave thing around the barrels that are bamboo.

    Wow I really cant imagine what this soy sauce would taste like. I would love to try this, instead of the salty black water they sell in common supermarkets
